How to serve endive?!
Answers: The store gave us a free package of endive. I have no clue on how to prepare and to serve. Please tell me your favorite way.
could you separate the leaves and fill them with salad (like chicken, egg, crab or tuna salad)
I would mix it with other types of lettuce and make a salad.
On a cracker.

Serve the leaves whole, with several different dips and some cream cheese.
Remember those cheese-filled celery stalks at cocktail parties? Do the same with endives.
You can gently wilt and slightly caramelize (let it turn brown) in olive oil, after slicing crosswise. It's nice as a side dish on its own, but I particularly like it raw with dips like red pepper, hummus, and baba ganoush (eggplant dip).
Wow - that's pretty great because endive is expensive. Eat is soon! Yes, take each individual leaf and use it to dip or put a little creamy dip on each piece.
You can also make a salad by cutting up the leaves and mixing with other leaves like radicio (I think that's a red leaf lettuce) and romaine. Endive is used in tri-colore salad.

make one of the easiest and most elegant hord'oeuvres.
(1) cut the stem off and separate the endive leaves. fan them out on a serving platter.
(2) toast walnuts on both sides in a dry heated skillet just until a little browned and the aroma of the nuts comes out.
(3) pick out the whole pieces and place one piece on each endive leaf.
(4) top each leaf with a small lump of blue cheese (i use maytag b/c it is creamy and mild).
(5) drizzle with a good quality EVOO.
this is so delicious. the slight bitterness and crisp texture of the endive, goes so well with the creamy cheese, and warm walnut. the olive oil helps to bind the flavors together.
