Robert O is dead wrong. Following two are correct. Arborio is the main rice used for risotto, but I've also had it made with canaroli. But tell us, what was in the risotto you made? Did you like it? Would you make it again?
I love risotto. It's not rice. It's a pasta made to look like rice. But just like blackening, risotto is not merely a dish, it's a technique.
Love risotto!
According to wikipedia: "Risotto, is a traditional Italian dish made with a suitable variety of rice such as Arborio, Carnaroli or Vialone Nano. It is one of the most common ways of cooking rice in Italy. It originated in North Italy, specifically Eastern Piedmont, Western Lombardy, and Veneto (where the Vialone Nano comes from) where rice paddies are abundant. It is one of the pillars of Milanese cuisine."
It also says that the most common rice used is the arborio rice--that gives it a nice creamy texture.
I love it. It took me some time to learn the technique too. And it is rice. Arborio rice. I like mine with garlic, bellas, and asparagus.
Love it! And you can do so many variations of it too! Its good Italian comfort food.
I first had it in Milan (Risotto alla Milanese) - made with saffron. I thought it tasted like baby food. But then had it over and over again and not only got used to it but started to make it myself and can honestly say that i Love eating it. There are 101 ways to make risotto. I've even been to the rice fields in Vercelli... have purchased rice from there and have cooked up some kick ars risottos!
I like risotto, but I would take paella anytime. Risotto is too dense and rich.
