My bf n I did this.
Can you believe it was his idea!
I helped.... a lot!

anyhow,

He baked the cake.
He decided to go w/ a spice cake for sentimental reasons and chose to put the cake in a 13x9 pan.
After it cooled I realized he needed my help because of my super awesome powers of cutting things straight and evenly.

He had greased and floured the cake pan liberally so it was easy for me to get the cake out in one piece.
I chose a board to put it on that would fit in the freezer... YOU NEED FREEZER ROOM FOR THIS CAKE.

After I had the cake on the board, I grabbed some dental floss, WAXED BUT NOT FLAVORED, I held the floss tightly n sliced that baby like butter, so it was like two 13x9 sheets.

Once again I had to use my womanly super powers to lift that top layer off w/out it falling apart.

Then he choose a vanilla ice cream in the standard rectangle carton so we could open the whole box up.
I turned the block of ice cream on its side and cut it, w/ a knife this time (teehee) in 3 even slices and pieced together the pieces on the cake. That last slice of ice cream had to be cut into smaller pieces as I tried to make it fit nicely.

Working quickly, I set the top layer of cake on it n started slathering it down w/ frosting.

We loved it but the frosting was far sweeter than the ice cream so we are going to make adjustments next time.

Oreo Ice Cream Cake

Ingredients:
1 Bag (small) oreo cookies
1/2 Stick margarine
1 cn (small) chocolate syrup
1/2 ga Vanilla ice cream
1 ct Cool whip; thawed

Crush Oreo cookies in a blender. Melt butter, then add to crushed Oreo
cookies and flatten on a large glass sheet-cake pan, pat down to make a
crust. Slice vanilla ice cream and lay on top of oreo crust. Pour Hershey's
syrup over vanilla ice cream. Spread cool whip on top of cake. Cover with
tin foil and freeze over night.

Mix a brownie mix according to package directions. Pour batter into a greased spring form pan. Bake until brownie is just set..don't overbake. Let cool completely. Line inside edges of pan with parchment paper or saran.

Take a carton of your favourite ice cream. (My favourites are chocolate chunk mint and chocolate caramel). Scoop over brownie base and spread evenly. Press down as needed to get rid of spaces. Freeze for a couple of hours.

Spread or pipe chocolate icing over surface. I often pipe small stars all over. Drizzle caramel syrup over top and sprinkle with chocolate shavings. Loosely cover with saran wrap. Freeze again.

Before serving remove spring form and saran. Let stand 10-15 minutes.

Turtle Ice Cream Cake

1 3/4 cups flour
1 cup chopped pecans
1 cup lightly packed brown sugar
1 cup oatmeal
1 cup margarine , melted, or use butter
1 1/2 cups caramel ice cream topping
8 cups vanilla ice cream , softened
Directions
1Combine first 5 ingredients and spread on a cookie sheet in a thin layer.
2Bake at 400 degrees until crumbs are golden.
3Check often to prevent it from burning!
4Crumble into 1-13 x 9 pan or 2-8x8 pans reserving some of the crumbs for the top.
5Drizzle 3/4 cup caramel sauce on top of crumbs.
6Scoop vanilla ice cream on top and spread evenly.
7Drizzle the rest of the caramel sauce and top with the reserved crumbs.
8Freeze until firm or overnight.
9If storing for an extended time, cover well to prevent freezer burn.


3 Ingredient Ice Cream Sandwich Cake
12 ice cream sandwiches , unwrapped
1 (6 1/2 ounce) can chocolate whipped cream

1 cup chopped Oreo cookies (or chopped Malted Milk Balls)

Directions
1Arrange 4 ice cream sandwiches long sides touching on a serving plate.
2Squirt an even layer of whipped cream over top.
3Scatter with 1/3 cup chopped Oreos or Malted Milk Balls.
4Repeat layers 2 times, garnishing top with a few larger chunks of Oreos or Malted Milk Balls.
5Freeze 6 hours or until firm.
6Slice to serve.
7May be frozen for up to a week.


7 layer Brownie Ice Cream Cake
1/4 cup unsweetened cocoa powder
3 tablespoons water
1 large egg
1 teaspoon vanilla
1/2 cup butter or margarine
1 cup sugar
1 1/3 cups flour
6 cups vanilla ice cream , softened
Garnish
whipped cream
raspberries
Heath candy bars , crushed
Directions
1Trace an 8-inch circle on a piece of waxed paper, using a cake pan as a guide.
2Place on a stack of 6 more pieces waxed paper.
3Using the traced circle as a guide, cut through all pieces of paper, giving you 7 waxed paper rounds.
4Heat oven to 375 degrees F.
5Have 2 cookie sheets and an 8-inch spring form pan ready.
6Brownie Layers: Whisk cocoa, water, egg and vanilla in a small bowl until blended and smooth.
7In a large bowl with electric mixer, beat butter and sugar about 3 minutes until pale and fluffy.
8Beat in cocoa mixture (batter may look curdled) with mixer on low speed; gradually add flour until well blended (batter will be very stiff).
9Spread the 7 rounds of waxed paper out on countertop.
10Drop a level 1/3-cup batter in center of each round.
11Divide remaining 1/3-cup batter between rounds (about 2 t each).
12Moisten a cookie sheet with water.
13Place 2 waxed paper rounds on sheet (the water will stop them from slipping).
14Spread batter almost to edges of rounds.
15Bake 8 minutes or until surface looks dry and set but is slightly springy to the touch.
16(While first batch bakes, spread out batter for next 2 layers.) Cool baked layers on cookie sheet on wire rack 3 minutes.
17Put layers on waxed paper on a wire rack.
18Let cool completely.
19Bake and cool remaining layers.
20Meanwhile, line spring form pan with plastic wrap, letting enough wrap extend about sides of pan to cover top when filled.
21Peel waxed paper off cooled brownie layers.
22Place 1 layer in bottom of pan.
23Spread evenly with 1-cup ice cream.
24Top with another brownie layer, then another cup ice cream.
25Repeat with 5 more brownie layer and the ice cream, ending with a brownie layer on top.
26Fold plastic wrap over top and freeze at least 8 hours or wrap airtight and freeze up to 1 month.
27To serve: Remove sides of pan and peel plastic wrap down from sides.
28Lift cake off plastic wrap onto serving plate.

Confectioners' sugar

Oven Temp ~ 425° Baking Time ~ 12 - 15 Min.
Pan Type ~ 15 x 10 x 1-inch jellyroll pan

Preheat oven, Line a greased pan with wax paper and grease again.
Beat eggs very lightly and add the sugar gradually, beating after each addition. Add 1/4 cup cold water. Sift flour, cocoa, baking powder, and salt together. Add egg mixture, beating slowly. Flavor with vanilla extract.

Pour in the batter, spread smooth, and bake.

Turn out on a towel sprinkle with confectioners' sugar. Remove wax paper and trim crisp edges. Roll up in a towel. Cool.

Unroll and spread with coffee or vanilla ice cream, softened enough to spread. Roll up quickly, wrap in foil and freeze 1 hour. At this point you can warm any chocolate frosting in microwave until it is pourable. Pour over log and decorate as desired, return to freezer. Keep in freezer until ready to serve. Slice and serve
