okay-take your penne, tomatoes, queso, onion, ranch style beans, and cheddar cheese and make a mexican stlye pasta dish ...even better if you add the sirloin!

Well my husband loves this recipe and he
doesn't usually like tuna either.
If you don't have the mac and cheese dinner
you could substitute penne pasta and make
your own pasta and cheese.

Macaroni Tuna Cassrole

Yields 4 big servings

Ingredients

1 package (7 ? oz.) macaroni and cheese dinner
1 can (10 ? oz.) cream of celery soup, undiluted
3 packages (3 oz. each) tuna
? cup of milk (fat free)
? to 1 teaspoon of onion powder (depending on your
taste for onion)
1 jar (4 oz.) of diced pimentos
1 to 2 cups frozen peas or frozen mixed vegetables
(whatever your preference)
1 cup (4 oz dry measure) shredded cheddar cheese

Minced fresh parsley. optional

Directions

Prepare macaroni and cheese according to package
Directions. In a bowl combine all ingredients excluding
cheese, then stir in the macaroni and cheese. Pour into
a 2 qt. baking dish greased or sprayed with cooking spray.
Sprinkle with cheese (and minced fresh parley if desired)

Bake, uncovered, at 350 degrees for 20 to 30 minutes
or until cheese is melted.

Thaw the sirloin and make spaghetti w/ meat sauce, but use your penne pasta instead. You can jazz up your ranch beans w/ bacon and onion+

Broccoli & Bow Ties
***(Just sub your penee for the bowtie pasta)***

Kosher Salt
8 cups broccoli florets (about 4 heads)
? lb. farfale pasta (bow ties), about 4 cups dry
2 Tbsp. butter
2 Tbsp. EVOO
1 tsp. minced garlic
zest of 1 lemon
1 Tbsp. freshly squeezed lemon juice
? cup toasted pine nuts (pignoli)
freshly grated parmesan cheese, optional

Cook broccoli for 3 minutes in large pot of boiling, salted water. Remove broccoli with slotted spoon or sieve; place in large bowl and set aside.

In the same water, cook the bow tie pasta according to package directions, or about 12 minutes. Drain well and add to the broccoli.

Meanwhile in a small saute pan, heat the butter and olive oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Remove from heat, and add 2 tsp. kosher salt, black pepper, and lemon juice, and stir well. Pour over the broccoli and pasta. Toss well, and season to taste. Sprinkle with pine nuts and parmesan cheese, if desired, and serve. Serves 6-8

Carrots - cut up in thin slices
Onion - Cut in thin slices or chop up

Sautee everything above except the Tomatoes until soft, then add the tomatos and the spaghetti sauce, heat to simmering for a few minutes.

Boil the pasta, drain, and pour the Tomato Prima Vera sauce over the pasta.

*Make the buiscuits, they'll go great with the above meal!

____________
Save the tuna, corn, questo dip, cheddar cheese Hamburger Helper and frozen sirloin for another meal.

For the sirloin, I take a big pot of lukewarm water and put the package of ground beef in that to thaw. Once its partially thawed you can start to cook with it.

Use your microwave to thaw the sirloin....... Only takes me about 15 mins. in the microwave.
