What's the best way to make soft chips (in South Africa we call them 'slap chips')?!
Answers: ie fried chips that are not hard and crispy but soft
HI there, OH WOW!!!! so im not the only person that loves his chips soft? okay here is my step by step to something very close to my heart, you must use a frying sort of potato , i will not name any because i dont know what you name yours in South Africa, clean and cut to the size that you like best and place in water, in a deep frier place oil of your choice , eg canola, olive oil, vegetable oil, another old favourite that makes the house smell like sunday roast is Lard or dripping (animal fat) Mc Donalds use it for their chips, ..... so ! get your oil hot but not smoking , test it with 1 chip ,if the chip starts to cook straight away add all the rest of the dried chips, ...cook til done , untill you get a light golden colour, then drain and spread the chips on a piece of grease proof paper ,sprincle salt , then wrap the paper like a parsell, also use about 8 sheets of news paper to wrap the parsel
as well ....... the idea is to trap the heat in to the parsel so you can steam the chips , after 7 minutes open parsel and enjoy the worlds best ! soft chips
I dont know, but mine always come out soft no matter how I try to get them crispy... haha
I just slice up potatoes. sprinkle with salt.. heat up the oil, fry till browned and let drain on paper towels.. and they come out all nice and soft (which I hate, id prefer crispy)
