Baked goods with eggs that are almost at past date?!
Answers: I made a cake late last week with some eggs that had an exp. date of Feb 28th., tomorrow. The cake was thoroughly baked, I'm just curious if that date matters when it comes to cooked eggs, are they considered spoiled in the cake even though they have been heated?
No, the exp date was for the eggs in their raw, store-bought state.
No cooking them will kill the bacteria. Plus eggs are good 2 weeks after the date on the box.
yeah it should be okay for a while. eggs last longer than their expiration date and cooking them changes how long they last. however the cake won't last that much longer.... it's going to start getting stale. eat it!!!!
Nah, eggs generally last longer than the expiration date. That's just butt coverage.
The problem is not the eggs. Any possible bacteria from the eggs would be killed during cooking. For home baked cakes, you need to check for staleness, bad odor or mold growth. If not then perfectly good to eat.

trust me, if your eggs have gone bad, you will KNOW as soon as you open the shell. the stench is unbareable.
When is doubt about the freshness of eggs, do this; immerse it in a pan of cool, salted water. If it sinks, it is fresh; it it rises to the surface, throw it away.
Fresh eggs' shells are rough and chalky; old eggs are smooth and shiny.
Those dates are usually "sell by" dates. The products are normally good for a reasonable time past the date. Milk, for example, should be good for a week by the sell-by date. But things could easily last longer than that if kept refrigerated. Smell it. Your nose knows. I've used eggs that were 3 months old with no ill effect.
