Cold Night Dinner Ideas?!
Answers: Temps dropping here in Florida to high 30's tonight. What should I cook for dinner to warm us up? It doesn't have to be an easy recipe, I enjoy cooking. Just have run dry of dinner ideas..
CHILI CASSEROLE
A simple casserole with a little zing! The zing comes from the taco sauce. This is a great dish for when you do not have much time to make dinner, but you want something that has substance and will fill you up! You can use any kind of cheese on top.
Ingredients
1 1/2 lbs. ground beef
1/2 C. chopped onion
3 stalks celery, chopped
1 (15 oz.) can chili
1 (14.5 oz.) can peeled and diced tomatoes with juice
1/4 C. taco sauce
1 (15 oz.) can corn
1 (8 oz.) package egg noodles
1/4 C. shredded Cheddar cheese
Directions
Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium high heat, sauté the beef and onion for 5 to 10 minutes, or until meat is browned and onion is tender; drain fat. Add the celery, chili, tomatoes, taco sauce and corn. Heat thoroughly, reduce heat to low and allow to simmer. Meanwhile, prepare the noodles according to package directions. When cooked, place them in a 9x13 inch baking dish. Pour the meat mixture over the noodles, stirring well. Top with the cheese. Bake at 350 degrees F (175 degrees C) for 20 minutes, or until cheese is completely melted and bubbly
BEEF TIPS OVER NOODLES
2 lbs. tip steak
1 med. onion
1 med. bell pepper
Salt and pepper
Dash basil
Dash garlic powder
1 jar Heinz onion gravy
1 jar Heinz brown gravy
1 pkg. egg noodles
1 tbsp. butter
Cube or strip tip steak. Melt butter in 10 inch skillet. Add tip steak, cut onions, cut bell pepper. Cook. Cook on medium heat until meat is tender. Drain. Add gravies, salt and pepper, basil and garlic. Simmer approximately 15 minutes.
Cook egg noodles according to package directions. Pour tip steak and gravy over noodles and serve.
A pot of chili might be good.
And then again chicken and dumplings might stick to those bones better and warm your soul.
I use a Rotisserie Chicken either from Publix or Kroger. I de-bone it and set it aside. I take two large container's of chicken stock (not broth) and then add a can of cream of chicken and herb soup (undiluted/Campbells). Whisk this together and then I use already frozen dumplings. I break them in bite sized pieces and add them a little at a time to keep them from sticking together. Make sure you have the chicken stock at a boiling stage. Once this is done I dump in my chicken pieces and let the dumplings cook until tender. I have tried it with canned biscuits before and they do not match up to the already made dumplings you can get in the freezer section of Publix.
Perfect every time and good comfort food on a cold night.
A recipe does not have to be lengthy or hard to be good.

Lol high 30's...well when it's -40F here this is what I make. Now I know it's just tomato soup, but it is the best tomato soup ever and I don't normally like tomato soup. Serve with crusty bread or garlic bread...yum.
Creamy Tomato Soup
1 large onion chopped
3 T butter
1 28 oz can diced tomatoes
1 48 oz can tomato juice
1 cup sherry or white wine
salt, pepper and sugar to taste
1-2T chicken stock powder
handful chopped parsley
1.5 cups heavy cream
Saute onions in butter until translucent.
Stir in tomatoes, juice, chicken stock powder, sugar and spices. Taste and reseason as needed. Bring to a boil, add parsley. Remove from heat and stir in heavy cream.
Leave as is or blend with hand blender until smooth. Serve.

Chicken N Dumplings
Boil a whole chicken . I always add broth or salt and pepper to taste.
Take chicken off the bone and put back into broth.
Buy the cheapest canned biscuits ( 4 pack ) Not the buttermilk type.
Bring chicken to a boil and tear biscuits into 3 or 4 pieces. Cook for about 10 to 15 minutes until dumplings are done .
I also, put onion in it to change it up.
Soup: Chicken & Rice.

Chicken Chunks.
Rice.
Diced Carrot.
Diced Celery/Sliced Leek.
Diced Onion .(medium)
More Vegetables.
Add all except the Rice and Extra Vegetables to a decent sized pot or stock pot.
Stir fry until the chicken has a little colour and the other vegetables are soft.
Add a little water to de glaze the pot and add as much for the size you want. (2 litres)
Bring to a boil and add rice. Return to boil then reduce to a rolling simmer.
Go through the freezer and take out all of those part bags vegetables and add.
Go through the fridge and look for what else to add.
Stir from time to time.
The rice will absorb a lot of liquid so that may need to be topped up.
Season to taste, and plate up.
Serve with Garlic Bread.
90+ degrees is too hot for us here in Hawaii, but everyone was complaining about how cold it was this morning...54F. The tourists all think we are crazy! Anyway, Corn Chowder is a local favorite for our "chilly" times. You can do allot with this recipe. Most locals omit the cheese and add cooked ham or bacon, but I love my cheese.
Cheesy Potato and Corn Chowder
"Comfort food . . . hot and tasty for those cold winter days."
Original recipe yield: 6 - 8 servings
INGREDIENTS
2 tablespoons butter or margarine
1 cup chopped celery
1 cup chopped onion
2 (14.5 ounce) cans chicken broth
3 cups peeled and cubed potatoes
1 (15 ounce) can whole kernel corn
1 (15 ounce) can cream style corn
1 (2.5 ounce) package country style gravy mix
2 cups milk
1 cup shredded Mexican-style or sharp Cheddar cheese
DIRECTIONS
In large saucepan, melt margarine or butter over medium high heat. Add celery and onion; cook and stir until tender, about 5 minutes.
Add chicken broth; bring to a boil. Add potatoes; cook over low heat for 20 to 25 minutes or until potatoes are soft but not mushy, stirring occasionally.
Stir in corn ; return to boiling. Dissolve gravy mix in milk; stir into boiling mixture. Add cheese; cook and stir over low heat until cheese is melted.
Serve with hot crusty garlic bread.
(Now I am hungry!)
Tortilla soup!!!
I use the frozen strips of fajita chicken, 2 cans of chicken broth and a cup of salsa. I cube the strips because I have little ones, but you don't need to. Heat all.
In your bowl, crush your chips, we've used everything from Frito's to the flour ones from tostidos. (I like the taste of the flour ones, my husband doesn't like them because he says they get too soggy too soon) Sprinkle cheese on them. (Cheddar has a better flavor for us, but you can use anything)
Scoop the soup over the chips and serve. It fills up my family and tastes great. You can also add in pretty much anything, like corn or pinto beans. Plus, you can make it as spicy as you like with the salsa. We use mild for the kids, but we enjoy the hot in it when it is for just the two of us.
It is watery in the pot, but thickens up with the chips and cheese to perfection. It is a quick meal, but wonderful. A repeated request from my family each week.
Soup....homemade is the best though. Or spagetti....im a fan n e ways.
