Fish stick recipes?!

Question: i want to make fish sticks tonight for dinner and was wondering if this recipe sounds okay.

Pan fry with 4 tbsp of oil.

Fish recipe:
take tilapia, lightly cover with mayo then dip in bread crumbs and parmasagn mixture, then place in hot pan. Fry 4 minutes on each side then remove. Springle lemon juice on top.

Can I use the mayo or do I need to use egg? If I need to use the egg to pan fry then can I bake it with the mayo instead?

mayo in fishticks?? no no no... do not use mayo. The egg in mayo is already cooked and will not bind a darn thing. I would dip your fish in flour, then egg, then breadcrumbs. Arrange on baking sheet and spray liberally with spray oil. Bake until golden and crispy. Serve with lemon wedge and tartare sauce!

the egg or mayo is kindof just... the glue... to make your breading stick. you can use either, either way.clarified butter (butter melted with the water content removed by scimming off the bubbles while it simmers) works good too or even buttermilk. good luck!
