Oh my goodness! I do TOO, for mothers day! I love curry and she doesn't so I want to make one that isn't too spicy, something mild like a chicken korma...

Probably something mild like Butter Chicken, Indian.
Just look up Butter Chicken recipe on the internet (or any other recipe you want, and it will have some really good ones to try).

Go to allrecipies.com. Type Curry in the search box. Look for a recipe that has the most stars and the most favourable reviews. then make sure there are not too many ingredients and you have most of the ingredients at hand or can get hold of them easily at the grocery store.

I have been cooking for 45 years. I never went to cooking school, never watched anyone on TV. Just got a good cook book and started cooking.

Just do it. Get an easy cook book and get to cooking! Best way in the world to learn.

That's the way we learn to ride a bike. Just get on it and ride. If we fall off we try again. Same way with cooking. If we make a mistake ......we just throw it away and try again.

I can't start to tell you how many times I have had to trash something I have cooked when I first started.

This is an easy curry recipe. It is one that I made as my first ever curry dish, and it turned out wonderful. It is called Milligatawny soup:
1/2 cup chopped onion
2 stalks celery, chopped
1 carrot, diced
1/4 cup butter
1 1/2 tablespoons all-purpose flour
1 1/2 teaspoons curry powder
4 cups chicken broth
1/2 apple, cored and chopped
1/4 cup white rice
1 skinless, boneless chicken breast half - cut into cubes
salt to taste
ground black pepper to taste
1 pinch dried thyme
1/2 cup heavy cream, heated

Saute onions, celery, carrot, and butter in a large soup pot. Add flour and curry, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.
Add apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done.
When serving, add hot cream.

*i omitted the cream - no loss for the recipe. I also made the rice seperately and spooned the soup over the rice in a bowl to serve.

Something mild like chicken korma or butter chicken (chicken makhani). Or make a Thai red curry - easy on the curry paste and heavy on the coconut milk. Also, maybe consider making tandoori chicken - because it's dry it's maybe a little easier to handle the new flavours, rather than a whole bowl of curry. Mmm curry I do love it...
