Question: So my boyfriend's birthday is coming up. I want to cook him something really good but easy to make. He love mushrooms. Please give me any ideas for main dish, side dishes, and pretty much anything.... Thanks a bunch

Mushroom Lasagna


Ingredients
# 12 lasagna noodles
# 2 teaspoons vegetable oil
# 1 onion , finely chopped (try a red onion)
# 2 cloves garlic , minced
# 1 1/2 lbs mushrooms (assorted or plain mushrooms, try cremini, shiitake, brown, button etc)
# 1 1/2 cups chunky pasta sauce , any flavour
# 1/2 cup grated asiago cheese (or what you like)



Cook lasagna according to directions.

Heat oil in skillet; saute vegetables until tender (about 10 minutes).

Stir in pasta sauce and heat through.

Spread thin layer of sauce in 13" X 9" dish.

Top with 3 noodles, then 2 Tbs cheese& some sauce.

Repeat layers twice.

Cover with remaining noodles, sauce and cheese.

Bake covered at 350 for 40 minutes.

Let stand 10 minutes before serving.

How about a filet mignon with a mushroom sauce on top? or mushrooms as a side veggie? Side dishes can be anything potato, such as a baked potato or mashed potatoes or roasted potatoes. Make him a chocolate cake for dessert, and put some strawberries on the side for a romantic touch. good luck!

He is a boy. They like burgers. Make him a bomb portibello mushroom burger. With FRESHLY cut and bakd fries and corn or somekind of veggie on the side.

meat in mushroom sauce
sauce:
1 cup [250 mL] fresh mushroom slices*
2 tablespoons [30 g] butter
2 tablespoons [17.5 g] flour
1 cup [250 mL] chicken broth
1/2 teaspoon [2.5 mL] Worcestershire sauce
1/4 teaspoon [1 mL] salt
Hint of garlic salt
1/8 teaspoon [0.5 mL] black pepper
1 teaspoon [5 mL] cooking wine
preparation
*Clean and remove ends of mushroom stems; slice mushrooms.
Melt butter into a small casserole and brown mushroom slices.
Remove mushroom slices from casserole; reserve.
Well mix flour into cooking liquids.
Then mix in chicken broth, Worcestershire sauce, salt, garlic salt, black pepper and cooking wine.
Bring mixture to a boil.
Mix in reserved mushroom slices, and serve.

and then put the suace on the meat,,,,,,its delicious !!

You could make sort of a fancy manly dinner. Get some of those pre-packaged fillet mignon with bacon wrapped around them. Id say 2 per person, theyre actually pretty inexpensive. Then sautee some onions with lots of mushrooms in butter. Serve those with the steaks. Then maybe make scalloped potates, the betty crocker or idahoan in the box are REALLY good and they have lots of flavors. Or you could make a gourmet baked potato with butter, real bacon bits, pepper jack cheeses and chives. You could do a salad with this, steamed broccoli with cheese, cauliflower, asparagus, or brussel sprouts. Pictsweet has baby green beans with garlic in a bag in the frozen veggie section and they are SO good and easy!!! Just cook for about 5 or 10 minutes over medium heat with a little olive oil and salt. Good luck!

PS I have a really good mushroom casserole dish (the recipes at home) if youd like it.

you could make chicken cordon bleu and put mushrooms in the chicken when you roll it up - not so easy to make, it just takes some time to prepare, but I guarantee your man will be satisfied

tenderize boneless, skinless chicken breast to about a 1/4 inch thick - put in cheese and ham of your choice (i use virginia baked ham and provolone/mozarella), add mushrooms - roll up and dip in a egg mixture, coat with bread crumbs and chill for 60 minutes

bake at 350 until chicken is done - doesn't take too long because the breast is very thin

go with some mashed redskin potatoes - or if you want to get really crazy - boil the redskins and season with olive oil, salt, pepper, and grill til golden brown

fresh steamed broccoli should finish the dish off nicely

For an Appetizer:

Italian Sausage Stuffed Mushrooms
3 Italian hot sausages, casings removed
1 1/2 teaspoons dried oregano
1 cup freshly grated Parmesan cheese (about 3 ounces)
1/2 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1 8-ounce package cream cheese, room temperature
1 large egg yolk

Olive oil
24 large (about 2-inch-diameter) mushrooms, stemmed
1/3 cup dry white wine



Sauté sausage and oregano in heavy large skillet over medium-high heat until sausage is cooked through and brown, breaking into small pieces with back of fork, about 7 minutes. Using slotted spoon, transfer sausage mixture to large bowl and cool. Mix in 1/2 cup Parmesan cheese, Worcestershire sauce, and garlic powder, then cream cheese. Season filling with salt and pepper; mix in egg yolk.

Brush 15x10x2-inch glass baking dish with olive oil to coat. Brush cavity of each mushroom cap with white wine; fill with scant 1 tablespoon filling and sprinkle with some of remaining 1/2 cup Parmesan cheese. Arrange mushrooms, filling side up, in prepared dish. (Can be made 1 day ahead. Cover and chill.)

Preheat oven to 350°F. Bake uncovered until mushrooms are tender and filling is brown on top, about 25 minutes.

You can use either left over cooked salmon or canned salmon for this recipe. Mix salmon with leftover or instant mashed potatoes, you want the potatoes firm. You can add an egg if you like. Roll the patties into a ball then roll the ball in a flour/seasoning mix. Have your oil hot, put the ball in the oil then carefully flatten with your hand. Flip once and serve.

MUSHROOMS:- FRENCH-FRIED

1 1/2lb Mushrooms
1C Flour
4 Eggs, beaten
1C Seasoned bread crumbs
Oil for deep frying
Brush mushrooms and remove stems.
Coat mushrooms with flour, dip into eggs, then into bread crumbs.
Deep fry in hot oil about 3 minutes, until golden brown.

8 cups chicken broth, low sodium
3 tablespoons olive oil, divided
1 onion, diced, divided
2 garlic cloves, minced, divided
1 pound fresh portobello and crimini mushrooms, sliced
2 bay leaves
2 tablespoons fresh thyme, chopped
2 tablespoons fresh Italian parsley, chopped
2 tablespoons butter
Salt and pepper
1 tablespoon truffle oil
1-ounce dried porcini mushrooms, wiped of grit
2 cups Arborio rice
1/2 cup dry white wine
1/2 cup fresh Parmesan cheese, grated
Fresh Italian parsley, for garnish

Heat the chicken broth in a medium saucepan and keep warm over low heat.
Heat 1 tablespoon of oil in a large skillet over medium heat. Add 1/2 onion and 1 clove garlic, cook, stirring, until translucent, about 5 minutes. Add the fresh mushrooms, herbs and butter. Saute for 3 to 5 minutes until lightly browned, season with salt and pepper. Drizzle in truffle oil then add the dried porcini mushrooms which were reconstituted in1 cup of warm chicken broth. Season again with salt and fresh cracked pepper. Saute 1 minute then remove from heat and set aside.

Coat a saucepan with remaining 2 tablespoons of oil. Saute the remaining 1/2 onion and garlic clove. Add the rice and stir quickly until it is well-coated and opaque, 1 minute. This step cooks the starchy coating and prevents the grains from sticking. Stir in wine and cook until it is nearly all evaporated.

Now, with a ladle, add 1 cup of the warm broth and cook, stirring, until the rice has absorbed the liquid. Add the remaining broth, 1 cup at a time. Continue to cook and stir, allowing the rice to absorb each addition of broth before adding more. The risotto should be slightly firm and creamy, not mushy. Transfer the mushrooms to the rice mixture. Stir in Parmesan cheese, cook briefly until melted. Top with a drizzle of truffle oil and chopped parsley before serving.

you can be creative and say for example you make a dish that doesnt have any mushrooms in it...decorate his plate with slices around the outer edge . lol
