Answers: You have to buy the food that you will be making. And the person who is giving the classes isnt a pro. they are just someone from your community that is a very good cook.
I attended a cooking class that was an extension from our local college. The "Instructor" wasn't a teacher but they were very knowledgeable in their subject matter. We (the students) paid $25 for the day-long class. I attended 3 of those. One was English Afternoon Tea (we made the tea sandwiches and scones and ate them). The second was done by our local English as a Second Language class. The "students" learning English had to put on a presentation of making a dish from their country. They had to speak in English. They were all housewives - again $25 (for the use of the classroom, etc.) In the first we learned to make Indonesian Lumpia or Egg Rolls, Thai Garlic Beef, Indonesian Peanut Sauce and Phad Thai. In the second, we learned to make Enchiladas, Agua De Tamarindo (tamarind juice), Flan (Mexican custard), Nopales Con Chorizo and Arrox (Mexican Rice).
We were shown how to make all those dishes and ate them!!! Can't beat that. And we were given the recipes to bring home.

Nothing- You can make lots of things yourself. There are things like mince meat, then you add, onions, carrots, red and green peppers. Use herbs and spices that you like just to you own taste. That is how I learnt to cook. Stop and think about what you would like to cook, then go out and buy the ingredients. Look at recipes and change them around to you taste.
