Cook Time: 40 minutes
Ingredients:
1 cup all-purpose flour
1/4 teaspoon salt
3/4 cup water* (see note below)
cooking spray, as needed

Preparation:
In a large bowl, stir the salt into the flour. Mix the water into the flour to form a batter. Cover and let rest for 1 hour.
Spray a non-stick pan with cooking spray and heat on medium low heat.
Turn the heat down to low and add a heaping tablespoon of the batter to the middle of the pan.



recipe 2:
1 cup rice flour
4 tablespoons flour
1/2 teaspoon salt
4 large eggs
1 teaspoon vegetable oil
2 cups water
Directions
1Sift rice flour, flour and salt together twice.
2In a separate bowl, mix the eggs, oil and water.
3Pour this mixture into the dry ingredients to form a batter.
4Mix thoroughly to get all the lumps out.
5Cover and set aside in a cool place for an hour.
6Heat a nonstick frying pan and drizzle or spray a little cooking oil on it.
7Pour in a little batter and quickly swirl it around to make a thin pancake.
8You don't have to flip it to cook the other side and it should not brown.
9Remove it from the pan when it looks like it has set.
10Repeat until all batter is used.
11Use immediately by filling them with your choice, otherwise they keep for a day in the refridgerator.
12They freeze well, just remember to separate them with clingfilm between the wrappers.


recipe 3: quick spring roll wrapper
3/4 cup flour
3 tablespoons oil
1/2 cup cornstarch
1 3/4 cups water , approximately
Directions
1Stir together flour, cornstarch, oil, and enough water to make a thin batter.
2Lightly oil a small (6") frying pan and heat.
3Spoon 2 Tbsp of the batter into the center of the pan.
4Swirl the batter around to coat the bottom of the pan.
5Cook until the wrapper is dry and starts to shrink from the edge of the side of the pan. Do not let it change colors.
6Transfer the wrapper to a plate and cover it with a damp cloth until you have made all that you need.
7To fill: place your favorite filling slightly off center of the wrapper. Fold the sides over, then roll the wrapper up to enclose the filling. Brush around the edges with a beaten egg to seal it. Deep fry the spring roll about 4 minutes and enjoy!

I don't think anyone makes them homemade. All the cooks on TV use the ready made ones.

these days no one makes their own anymore since it takes up so much time, I found this one:

there's 2 different kinds of wrappers, one made for "egg-rolls" (the ones you get from chinese resturants & find in your local asian markets in the refrigerator section) & the other one is rice-papper wrapper for "spring-rolls" (that consists of rice noodles, various meat, herbs, & shrimp [optional] on the inside of the wrap).

The egg-roll wraps are white-pastel looking, deep fry in oil. While the spring-roll wraps are clear & hard. You have to dip it in hot water to make it soft, no need to cook it (except for the meat, shrimp & rice noodle for the inside)

The wrappers for Fried Spring Rolls or Lumpia are normally purchased from supermarkets. In the Philippines, we prefer to buy them in wet markets where the wrappers are made in full view of the buyers.

The wrapper for Fresh Spring Rolls, the kind that is not fried, is sometimes tinted yellow. It is made like a flour crepe, but with more egg content than an oridnary crepe.

Spend your time on the fillings for the spring roll and use stor bought wrappers.
