Chicken dish... need some ideas!?!


Question: i have cooked chicken that i have boiled.. the are legs and thighs attatched.. i want to pull the chicken off of the bones and make some sort of cream crazy and serve over toast.. and ideas? please dont go to crazy.. my hubbie is really picky with his food...and hardly eats anything weird.

put it in a can or two of cream of chicken soup and some milk. Add some frozen peas if he likes that and serve over toast or mashed potatoes.

just put it into a chicken gravy and serve it over toast that way.. along with mashed potatoes and green peas.. yummy..

What about apricot chicken?

1 tbspn Sour Cream, optional
500 g Skinless Chicken Breast Fillets, cut into large cubes
2 Spring Onions, sliced finely
1 Zucchini, sliced into ribbons with a peeler
Potatoes, for mashing, when serving
1 tbspn Olive Oil
1 can Apricot Nectar
40 g pkt French Onion Soup Mix
825 g can Apricot Halves in Natural Juice, drained

1. Heat oil in a large non-stick frying pan over medium heat. Add chicken and cook for 6 minutes or until golden brown.

2. Combine apricot nectar and soup mix. Add to chicken with apricots. Stir gently. Simmer, covered, for 6 minutes. Add zucchini and spring onions and simmer for a further minute or until zucchini is just soft.

3. Remove from heat and stir in sour cream. Serve with mashed potato.

Make some chicken salad with the meat. Mirepoix, sliced grapes, almonds, little pickle, sour cream and some mayo/miracle whip. It makes a delicious (and healthy) wrap or you can put it on your favorite bread with some sharp cheddar and bake it in the oven.

what about chicken stew but served over texas toast. I have a great recipe thru Food Network I make alot and freeze about half of it for quick dinners. Make chicken gravy with bits of chicken in it and drizzle over a big mound of fluffy mashed potatos, Home made chicken noodle soup with big pieces of fresh crusty french bread to dip in to the broth.

Also any recipes you get from us who are answreing read the ingredients to him and if there is something about it he doesnt like then dont make it or omit the item if possible. my hubbys picky too so are the kids.

Make a cheese sauce (tablespoon of flour, tablespoon of butter, cup of milk and a hand full of grated cheese and some pepper if hubby likes. Simmer and stir in a pot til thickened) then chuck in chicken and corn and your done. 15mins tops and it tastes awesome.

Add some cooked rice and you can call it "risotto". Clever huh? :)

Cheesy Chicken Noodle Casserole
2 chicken breasts , cooked & deboned
1/2 (11 ounce) can cream of chicken soup
1 tablespoon olive oil
1/4 lb Velveeta cheese (cut into cubes)
1/2 (12 ounce) bag egg noodles
1 (15 1/4 ounce) can corn
1 tablespoon seasoning salt (such as Lawry's)
1/2 tablespoon parsley flakes
1 teaspoon pepper
Cook egg noodles in boiling water till chewy.
Combine cream of chicken soup, egg noodles, and chicken till boiling.
Reduce heat, and add Velveeta cheese, corn, and pepper.
Cook until all of Velveeta is melted.
Remove from heat and sprinkle with parsley flakes.

Tater Tot Chicken Casserole
2 cups of deboned chicken
2 cups shredded cheddar
1 medium onion , chopped
1/4 teaspoon pepper
1/2 cup water
1 (10 3/4 ounce) can cream of mushroom soup
**1 can of corn (optional)
1 lb frozen tater tots
Preheat oven to 375°F.
In a non-stick skillet over medium heat sauté the onion until the semi soft.
Stir in pepper, water and mushroom soup and heat till bubbling.
Add chicken and corn stir cook until the corn is warm.
Pour 1/2 the mixture into a 2 quart (2L) casserole. Top with 1 cup of cheese. Arrange tater gems in a single layer on top of the cheese. Pour the rest of the chicken mixture on top. Bake, uncovered, for 40 to 45 minutes or until the tater gems are crisp and the chicken mixture is bubbling. Put the remaining cheese on top return to oven for a few minutes till melted.
