Go to your Yahoo search engine Put in : Spicy Chicken Recipe/with Apricots
Ingredients:
4 skinless chicken breasts
1 large red chili pepper-finely chopped
1/2 jar apricot preserves
Chili powderFresh cracked black pepper
Method
Heat oven to 375 degrees. Place chicken breasts in a glass baking dish. Mix apricot preserves, chopped chili pepper, and cracked pepper--heat on the stove until warmed through. Sprinkle chicken with chili powder and baste with a light coating of apricot sauce. Bake for 35 minutes. Coat chicken with the rest of the sauce and bake for an additional 10 minutes or until chicken is done.

Buy a jar of chutney, soak apricots if needs be in small amt liquid (water/wine/cider/green tea) and simmer them until soft. Chop them up add to chutney spread sauce over the pieces of chicken. Bake in 350 degree oven for about 40 minutes or until thoroughly cooked. Serve on rice.

Ingredients
6 boneless skinless chicken breast halves
1 tablespoon vegetable oil
2 garlic cloves , pressed
1/3 cup apricot preserves
1 tablespoon Dijon mustard
1/2 cup chopped dried apricots
1/2 cup chicken broth or vegetable broth
1/4 teaspoon crushed red pepper flakes
Directions
1 In a large skillet, thoroughly brown and cook chicken on all sides in vegetable oil. Add garlic; saute lightly (don't let brown).
2 In a medium bowl, combine apricot preserves, Dijon mustard, dried apricots, chicken broth and crushed red pepper. Evenly pour over chicken in skillet. Simmer, covered, 5 minutes over low heat till sauce is slightly thickened.
3 Leftovers Idea: Drain off the sauce and chill. Chop up the leftover chicken and apricots. Add some mayo, flaked toasted almonds and sliced green onions, and you have a delicious chicken and apricot salad which you can add to a bed of mixed greens or use as is as a sandwich spread.

1/4 ts Crushed red pepper

apricot preserves, Dijon mustard, dried apricots and crushed red pepper.
Evenly pour over chicken in skillet. Simmer, covered, 45 minutes over low
heat, or until chicken is thoroughly cooked. Serve over hot, cooked rice.
