The Recipe:

3 ounces unsweetened chocolate
6 Tablespoons margarine or butter
2 cups flour
2 teaspoons baking soda
1 Tablespoon white vinegar plus enough milk to make 1/4 cup
2 very ripe bananas
2/3 cup sugar
1 teaspoon vanilla extract
2 large eggs
1 cup semi-sweet chocolate chips

Heat margarine and unsweetened chocolate in a microwave or double boiler until the chocolate is melted. Stir to combine, and set aside to cool slightly. Mix vinegar and milk. Set aside till curdled. Mix flour and baking soda. Set aside. In a large mixing bowl, mash the bananas. Add sugar and beat until well mixed. Add vanilla and eggs, and beat. Add chocolate mixture when cooled, and beat. Alternately add the flour and the milk, beating after each addition. When all is completely mixed and smooth, add in the chocolate chips. Spoon the mixture into 12 paper-lined muffin cups. Bake at 350°F for 25 minutes, or until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer the muffins to a wire rack to cool completely. Makes 1 dozen large muffins.

7If you find the mixture too dry add 1/4 cup milk, extra.

10Dust with icing sugar when cool (optional).

1/4 cup fresh lemon juice
1/2 cup butter
2 large eggs
2 cups flour

Directions
1Finely grate lemon peel, avoiding pith.
2Beat butter and sugar until pale and creamy. Add eggs, one at a time, beating well after each. Stir in baking soda and grated peel. Fold in half the flour, then half the buttermilk. Repeat. Fold in chocolate chips.
3Scoop 1/4 cup batter into prepared muffin tins.
4Bake at 375 degrees for 20-25 minutes. Remove from oven.
5Brush lemon juice over hot muffins until used up. Sprinkle with sugar. Let stand 5 minutes before removing from pans.

Surprise! There's a tasty pocket of cream cheese that bakes in sweet and easy chocolate chip muffins.

Makes:12 muffins

Filling
1 package (3 oz) cream cheese, softened
1 tablespoon sugar
1 tablespoon milk
Muffins
1 cup milk
1/3 cup vegetable oil
1 egg
2 cups Gold Medal? all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup miniature semisweet chocolate chips


1. Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or spray, or line with paper baking cups. In small bowl, mix all filling ingredients until smooth; set aside.
2. In large bowl, beat milk, oil and egg with fork or wire whisk. Stir in remaining muffin ingredients just until flour is moistened. Divide batter evenly among muffin cups.
3. Place about 1 rounded teaspoon filling on batter in each muffin cup. Top with remaining batter.
4. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to cooling rack (may need to run knife around side of muffins to loosen). Cool 5 minutes. Serve warm or cool.

3. Lightly beat the egg. In a small bowl, stir together the chocolate-butter mixture with the buttermilk, sugar, egg, and vanilla, until blended well.
4. In a large bowl, stir together flour, soda, and salt. Make a hole in the center of the dry ingredients, pour in the chocolate mixture, and stir until just combined. Stir in the mini chocolate chips. Spoon the batter into the lined muffin cups.

Remove muffin tin from oven and let stand at least 5 minutes, before removing the muffins and letting them cool on a wire rack. Serve warm or cooled; can be frozen as well.
