How do I make buttermilk at home?!

according to how much you need , just add white vinegar, for a quart its about 1 tablespoon
i think you just add some vinegar to milk..sorry I dont' know the exacts on this one
1 Cup of milk, and 1 tablespoon of white vinegar(or lemon juice)....stir together well, and let sit 5-10 minutes for it to thicken. :)

1 cup plain yogurt, stirred, or
1 tablespoon lemon juice (or 1 tablespoon vinegar) stirred into 1 cup milk; let stand 5 minutes to make soured milk for baking only
(never use soured milk that's been in the fridge too long; it's actually spoiled)

You don't have to use as much as a full tablespoon of lemon juice or white vinegar; I typically use more like a teaspoon or a teaspoon and a half per cup of milk.
This replacement doesn't have the thicker consistency that refrigerated buttermilk has, but it works flavor-wise. You can also just use plain milk in most recipes, without much of a difference.
If you like to bake with buttermilk but don't like to stock it (because it spoils so quickly and is used so seldomly), get some Saco Cultured Buttermilk Blend (a powder you mix with water.) You'll find it in the baking aisle of most grocery stores.
