Question: okay so i need a banana recipe asap
i have 4 small bananas,the peels are still yellow with brown speckles and i dont like eating them mushy like that. what recipes would be good for ripe bananas..thanks..and i would like links for recipes if you hv them =)

Hi there, here are a few recipes that call for ripe bananas enjoy!!

Banana Bread:
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.


Baked Bananas with Coconut:
4 ripe bananas
1 to 2 tablespoons melted butter
pinch salt
1 tablespoon lemon juice
2 teaspoons granulated sugar
1/2 cup flaked coconut

Directions:
Preheat oven to 375°.
Peel bananas and place in a well greased baking dish. Brush generously with butter and sprinkle lightly with salt. Sprinkle granulated sugar evenly over bananas, then drizzle with lemon juice and sprinkle with coconut.
Bake for 15 to 18 minutes, or until bananas are tender. Serve with syrup or a dessert sauce, if desired.


Banana Fritters:
4 bananas, ripe
1 1/2 tablespoons lemon juice, about 1/2 lemon
2 tablespoons sifted confectioners sugar
1/2 cup biscuit mix
1 tablespoon sugar
1/8 cinnamon
1 egg
1/4 cup milk
oil for deep frying

Cut bananas into thirds; sprinkle with lemon juice and confectioners; sugar. Set aside and let stand for 15 to 20 minutes.
Mix biscuit mix with sugar, cinnamon, egg, and milk. Dip banana chunks in batter and fry in deep fat at about 370°.

Serve with syrup and a shaker of confectioners' sugar.


Roasted Halibut with Banana-Orange Relish:
Fish
1 pound halibut, Pacific cod or other white-fleshed fish
1/2 teaspoon ground coriander
1/4 teaspoon kosher salt

Banana-orange relish
2 ripe bananas, diced
1/2 teaspoon freshly grated orange zest
2 oranges, peeled, segmented and chopped
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
1/2 teaspoon ground coriander
1/4 teaspoon kosher salt

Directions:
1. To prepare fish: Preheat oven to 450°F. Lightly coat a baking sheet with cooking spray.

2. Cut fish into 4 portions. Mix coriander and salt in a small bowl and sprinkle evenly on both sides of the fish. Place on the prepared baking sheet.

3. Bake the fish until it is juicy and almost flakes when pressed with a knife, 8 to 12 minutes, depending on thickness.

4. To prepare relish: Meanwhile, stir together bananas, orange zest, chopped oranges, cilantro, lime juice, coriander and salt in a medium bowl. To serve, spoon the relish over the roasted fish.



Banana Pudding:
12 ounce Nabisco Nilla Wafers
1/2 cup Egg white unbeaten, room temp
4 cups Whole milk
1/8 cup Egg white unbeaten, room temp
2 boxes Jello Cook and serve Vanilla Pudding
2 tablespoon Sugar
1 pinch Nutmeg freshly grated
1/2 teaspoon Vanilla
4 Ripe bananas make sure they have some brown spots on the skin
3/4 teaspoon Lemon juice fresh

Directions:
Line the bottom and sides of an 8x8x2" baking dish (2qt) with a layer of the vanilla wafers. They should just cover the bottom of the dish.

Prepare the vanilla pudding according to the pudding directions on the package (you will need the 4 C of milk for this). While the pudding is still hot, stir in the nutmeg; set the pudding aside to cool for 5 min (but no longer)

Preheat oven to 500 degrees

Peel 2 of the bananas and slice them into rounds that are 3/8" thick. Top the layer of cookies in the bottom of the dish with the banana slices. Top the banana slices with a second layer of vanilla wafers. Peel the reamaining 2 banabas, slice them into rounds that are 3/8" thick, and distribute them evenly on top of the second cookie layer. For the final layer, top thoes bananas with another layer of cookies.

Pour the still warm pudding over all. Shake the dish carefully, and tap it on the counter, to remove any air holes within the layers.

Make the meringue. Add the egg whites, sugar, vanilla, and lemon juice to the medium size bowl of a standard kitchen mixer with the whisk attachment. Whisk the mixture on medium speed until it just holds a peak. It should be light and flluffy; do not over mix it.

Using a rubber spatula, top the entire surface of the pudding wvenly with the meringue. Dip a spoon into the durface of the meringue and pull it out quickly to create little peaks all over the top of the pudding.

Place the pudding on the top rack of the oven. Bake just until it is nicely browned on top, about 3 min. (It can burn very easily, so watch it carefully) Remoe the pudding from the oven and let it cool down for 1 hour on the countertop. then place in refregerator and chill for at least 3 hours, but not more than 5 hours.

Deep-fried Bananas with Caramel Sauce

Ingredients
4 bananas
1/2 cup hazelnuts , toasted and finely chopped
1/2 cup fresh breadcrumbs
vegetable oil
Sauce
1 1/2 tablespoons butter
1 cup brown sugar
4 tablespoons water
1 1/4 cups coconut milk
Directions
1Peel the bananas and cut them in half lengthways, then half again, so that you have long strips.
2Mix the hazelnuts and breadcrumbs in a bowl and roll the banana pieces in it.
3Press some of the mixture into the flesh to make sure it is well coated.
4Heat all the sauce ingredients in a small heavy sauce pan, stirring constantly.
5Heat the oil in a wok to 180 degrees Celsius.
6How much oil you use is relevant to how big your wok is.
7Put enough so it will cover the bananas, but never fill it more than halfway.
8Deep fry the bananas in batches for about 2 minutes, or until golden brown.
9Place the fried bananas on a piece of paper towel on a place to let the oil drain.
10To serve, place the bananas on a plate and pour some caramel sauce over top.

i would make a fruit smoothie
you will need 1 or 2 bananas
fresh or frozen mixed fruit
peaches, a kiwi and orange some crushed ice
soy or silk milk
you could add a little sweetner
put it all in a blender

Do you have ice cream? If so they are perfect for bananas foster!

1. Melt down butter and add some brown sugar.
2. Add the cut up bananas and cook until carmelized.
3. Add some brandy or rum if you like.
4. Pour over ice cream

I've been freezing the bananas when they get brown. I peel them and 1/2 them. Throw them in a zip lock bag and freeze. After that you can use it for anything. I personally use them for "smoothies". I call them smoothies anyway. I toss it in a blender with oj sometimes some mango or whatever fruit is turning. The only thing you do is microwave for 30 seconds first. Awesome.

Banana Split Cheesecake

No-bake cheesecake.


INGREDIENTS
2 1/2 cups graham cracker crumbs
3/4 cup melted butter
4 cups confectioners' sugar
2 (8 ounce) packages cream cheese
1 (8 ounce) can crushed pineapple, drained
3 medium bananas, quartered
1 (12 ounce) container frozen whipped topping, thawed
8 maraschino cherries, halved
1/2 cup chocolate syrup
1/2 cup pecan halves


DIRECTIONS
Blend the melted butter or margarine with the graham crackers and press into the bottom of one 9x12 inch pan.
Blend the confectioner's sugar and the cream cheese together until smooth. Spread over the graham cracker crumb layer. Layer the crushed pineapple and the bananas over the cream cheese layer. Then spread the whipped topping over the top. Decorate with maraschino cherry halves. Drizzle chocolate syrup over the top and sprinkle with pecans. Chill for at least 4 hours then serve.


Quick Banana Pudding





1 large package (6 oz.) instant vanilla pudding

2 1/2 C. cold milk

1 (14 oz.) can sweetened condensed milk

1 (16-oz.) container whipped topping

2 - 3 bananas, sliced

40 vanilla wafer cookies

Prepare pudding according to package directions, using cold milk. Stir in condensed milk. Blend well; fold in half the whipped topping.

Layer pudding, bananas and vanilla wafers; top with remaining whipped topping and a few banana slices. Refrigerate overnight.
