Chorizo salami recipes.?!


Question: I bought a chorizo salami and nobody in the family really likes it that much, I was wondering if anyone had any good recipes that I could use it in rather than throw it away.

Chicken Chorizo (Pollo con Chorizo)
150 g chorizo SALAMI
4 pieces chicken , breast
paprika (to season)
2 onions
6 cloves garlic
400 g tinned tomatoes , passata (or equivalent)
1 fresh laurel leaf or dried dried laurel leaf (, or similar herb)
sherry wine or brandy (to flavour)
salt and pepper (to flavour)
olive oil (for cooking)
boiled potatoes (, to accompany)
Directions
1Season the chicken liberally with paprika.
2Brown the chicken in a pan using the olive oil.
3Remove the chicken and fry the onions.
4Meanwhile chop the chorizo into pieces and add to the pan.
5The juices from the chorizo will blend with the onion.
6Add the garlic and continue to cook lightly for a few minutes.
7Add the tomatoes, laurel, sherry, brandy and everything else.
8Cook on the hob or in the oven for another hour, stirring if appropriate.
9Serve with boiled potatoes.

I would suggest you make a simple fried rice.

one egg

Dice the chorizo into tiny cubes. Get some cooked rice (not the uncle bens, but something like a california short grain.) In a frying pan throw in and egg and start to scramble. Toss in about a fist full of diced chorizo and the frozen peas. Toss it all around. Add in the rice. Season with salt, a pinch of sugar and if you want, some soy sauce. If you have some green onions, dice that and throw it in too.

You might not use all the chorizo, so you can freeze it and use it later. It's also makes a good omlette.

Breakfast burritos!

Simply fry the chorizo, add scrambled eggs to it, wrap it up in a hot tortilla and enjoy. Simple and delicious.
