How can i stop my sponge cake rising like a dome on top?!

the best thing to do is reduce the amount of yeast or baking powder in your cake mix
or if you use self raising flour you can swap some of it for some plain and it will stop it from rising too much

or you can turn the dome inside out and have your cake as a bowl by putting LOADS of baking powder in the mix

Do not grease sides of cake pan.

Spread batter a little thicker around the edges, thinner in middle.

Ifall esle fails, use a serrated knife to cut off the crown.... this is also known as the "Baker's Treat." :-)

You could put the pan in a water bath, but I've noticed sometimes that can discolor both the cake pan and the outer pan holding the water. If that doesn't bother you, a water bath is a good idea. You can also use strips of wet cloth, and use a "T" pin to hold the ends together around the outside of the pan. They also sell strips that are specially made for this purpose, in different lengths, with a reflective outer cloth. They come with the pins and everything, you just soak them, and pin them around your pan.
