What can I make with brandy?!


Question: I bought some for a party we had and it's just sitting there. It seems a shame to waste it, but we don't like any drinks made with it. I thought it might be good in a recipe or sauce. Any ideas?

yeah, if you like steak, you can make an awesome steak sauce with Brandy. you take A1 sauce and add 2 Tbsp garlic, 2 Tbsp brandy, 1 tsp cracked black pepper, and 1 Tbsp. butter and mix it all together.

APPLE BRANDIED PORK CHOPS

4 (3/4-inch-thick) pork chops, trimmed
1/2 tsp. freshly ground pepper
1/4 tsp. dried whole thyme
1/4 tsp. rubbed sage
1 med. onion, finely chopped
2 ribs celery, chopped
2 cloves garlic, minced
1 c. apple juice, divided
1/4 c. brandy
2 tsp. Dijon mustard
1/2 tsp. instant beef-flavored bouillon granules
2 med. apples, peeled and sliced
2 tsp. cornstarch
2 tsp. Kitchen Bouquet

Arrange pork chops in a 12 x 8 x 2 inch baking dish. Sprinkle pork chops with pepper and herbs; arrange vegetables around pork chops. Combine 1/2 cup apple juice, brandy, mustard and bouillon; pour over chops. Cover and bake at 350 degrees for 45 minutes. Add apples; bake 15 to 20 additional minutes.
Remove pork chops to a serving platter. Combine cornstarch, remaining 1/2 cup apple juice, and browning agent/flavor enhancer, mixing well; stir into casserole. Bake, uncovered, for 10 minutes or until thickened, stirring occasionally. Pour sauce over pork chops. Yield: 4 servings.

OR

LOBSTER IN BRANDY CREAM SAUCE

1 lb. lobster meat, cooked (do not over cook)
1 stick butter
1 onion, melted
2 carrots, shredded
1/4 c. brandy
1 tsp. fennel
1 tsp. salt
1/2 tsp. cayenne pepper
1/2 tsp. saffron (if not available, use paprika)
1/2 tsp. lemon juice
2 c. heavy cream

Chop lobster meat into 1 inch pieces and set aside. Saute onions and carrots in butter until tender. Add the lobster and cook until lobster is glazed but not brown. Heat brandy. Pour over lobster and set aflame. Stir until flame dies. Blend in seasonings, lemon juice, and cream. Stir until thickened. Serve over rice or linguine.

OR

APRICOT BRANDY PUNCH

1 (No. 2 1/2) can chunk pineapple
1 fifth apricot brandy
1 orange, sliced
2 qt. ginger ale
1 lg. frozen lemonade

Pour pineapple including juice into punch bowl. Add the full bottle of apricot brandy. All to stand for a time so pineapple absorbs some of the brandy. Shortly before serving, add the lemonade, ginger ale, and slices of orange which will float on top. Complete with an ice ring made with additional lemonade.

OR

BOURBON - BRANDY BALLS

1 box vanilla wafers, crushed
3 tbsp. cocoa
1 1/2 c. finely chopped walnuts
4 1/2 tbsp. corn syrup
1/3 c. bourbon - brandy
1 c. confectioners sugar (also extra for rolling balls)

Mix together wafer crumbs, cocoa, nuts and confectioners sugar. Add syrup and bourbon - brandy. Mix well and form into balls. Roll balls in confectioners sugar. Finely chopped coconut may also be added if desired. Makes 50 to 60 balls.
