1 cup sugar
2 tablespoons flour
3 egg yolks
2 cups milk
1 tablespoon vanilla
1 box vanilla wafers
5 bananas

Layer bananas, then wafers in oven proof medium bowl. In saucepan add sugar and egg yolks; mix well adding milk when needed. Add flour to egg mixture, then the rest of the milk; mix well. Add vanilla, stir constantly on medium heat until thick and smooth. Pour over wafers and bananas.

Make topping from egg whites. Beat egg whites until stiff. Add three tablespoons sugar. Beat again. Add a teaspoon vanilla; beat again. Lightly brown in oven.

A good homemade banana pudding does not use pudding mix! This is the best I've ever eaten!

3/4 cup sugar
1/8 teaspoon salt
1/3 cup self-rising flour
2 cups milk, low fat or whole
2 eggs, separated
2 tablespoons butter, softened
1 1/2 teaspoons vanilla
vanilla wafer cookies
3 bananas, ripe but firm
1/4 cup sugar
1/2 teaspoon cream of tartar

Combine 3/4 cup granulated sugar, the salt, and the self-rising flour in a bowl. Slowly stir in milk. Put mixture in top of double boiler over simmering water and cook until mixture begins to thicken. Beat egg yolks then briskly stir a small amount of the hot mixture (about 1/2 cup) into them. Add egg yolk mixture back into the hot mixture in top of double boiler and stir in butter and vanilla. Cook until mixture thickens again. Place a layer of vanilla wafers in an 11x7-inch baking dish (or other shape 2-quart shallow baking dish). Add half of the sliced bananas. Pour half of pudding mixture over banana layer. Repeat layers, ending with remaining pudding. In a mixing bowl beat egg whites until foamy; gradually beat in 1/4 cup granulated sugar and cream of tartar. Beat until stiff peaks form. Spread meringue over pudding. Bake at 350° until browned completely. Remove from oven. Serve hot or cold.

*If you don't have a double boiler, simply use 2 pans (one slightly larger than the other). Put water in the bottom of the bigger pan, and then set the smaller pan on top, making sure the water level hits the bottom of the smaller pan.

Microwave BANANA PUDDING
3/4 c. sugar
2 TB. cornstarch
1/4 tsp. salt
2 c. milk
.... In 1 qt. casserole pan, blend together well. Microwave on HIGH 5-7 min, stirring every 3 min., until mixture is smooth, thickened and clear

2 egg yolks (slightly beaten) OR 1 egg (well-beaten)
1-2 well-mashed bananas
..... Beat eggs & bananas until well blended and creamy. Stir a small amount of the hot pudding mix (from Step 1) quickly into egg mixture. Then put the whole egg mixture into the hot pudding, mixing well. Microwave at Med-High 1-3 min, stirring after 1 min, until smooth and thickened.

2 Tb. butter
1 tsp. vanilla extract
.... Add butter and vanilla and stir until butter is melted. Pour into serving dishes. Refrigerate

For an authentic Southern touch, garnish or serve with vanilla wafer cookies

Serves 4

ok this one has been in my family for 5 years and own awards for being simple and easy...........................
you need a box of Jello vanilla instant pudding mix, 1 box of vanilla waffers, and about 4 to 6 banana's. Make the pudding ad box tell you, make the instant version not the boiling version. When you are done find a big bowl, slice the banana the same size as the cookies, next you layer them in your dish, example:
layer of waffers, then bananas then pudding, repeat until its al done, crumble some waffers on top and chill for about 3 hours then serve.
