CHICKEN FAJITAS
4 boneless skinless chicken breasts
1/4 stick butter
1 cap full Mrs. Dash (regular or chipotle)
1 large onion
1 green pepper
1/4 brown sugar
lettuce, tomato, sour cream, guacamole, cheese, tortillas
Slice chicken into long strips, place in pan with half of the butter and Mrs. Dash. Cook until done and lightly browned. Stir in a small amount of water or chicken broth and the brown sugar. Cook until caramelized.
Chop the pepper and onions into strips and rings, sauté in a separate skillet with the remaining butter. Cook until onions are caramelized and peppers have crispy edges.
These fajitas are really easy to make and a little different because they're sweet and spicy.

Cream Cheese, Garlic, and Chive Stuffed Chicken
Butterflied chicken breasts are stuffed with a garlic, chive, and cream cheese mixture, wrapped with a slice of bacon, and topped with butter. Very delicious and easy to make!
INGREDIENTS
1 (8 ounce) package cream cheese, softened
2 tablespoons dried chives
1 clove garlic, minced
4 skinless, boneless chicken breast halves, butterflied
4 slices turkey bacon
4 tablespoons butter, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a bowl, mix the cream cheese, chives, and garlic. Divide the mixture into 4 balls.
Place 1 cream cheese ball in the center of each butterflied chicken breast half. Fold the chicken over the cream cheese, wrap with a slice of turkey bacon, and secure with toothpicks. Arrange the chicken in a baking dish. Pour the butter over the chicken.
Bake 30 minutes in the preheated oven, or until the bacon is crisp and the chicken is no longer pink and juices run clear

This recipe is SUPER simple and incredibly tasty. If you like Pasta Aglio Olio (pasta with garlic and olive oil), you'll LOVE this. The salty, garlicky salami with the sweet green peas --
INGREDIENTS
1 (16 ounce) package dry mostaccioli pasta
2 cups frozen green peas
1/2 cup olive oil
1/4 cup butter
1 bunch green onions, chopped
2 teaspoons minced garlic
salt to taste
1/2 teaspoon ground black pepper
3/4 teaspoon ground cayenne pepper
8 ounces thinly sliced hard salami
1 cup freshly grated Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Place pasta in the pot, and cook for 6 minutes. Mix in peas. Continue cooking 4 to 6 minutes, until pasta is al dente. Drain, and return to pot.
Heat the oil and butter in a skillet over medium heat. Stir in green onions and garlic. Season with salt, black pepper, and cayenne pepper. Cook and stir until green onions are tender. Mix in salami, and continue cooking until heated through. Transfer to the pot with the cooked pasta. Add Parmesan cheese, and gently toss
gonna do a cheating way of making chicken and dumplings tomorrow---chicken breasts--boneless and skinless--brown them up with salt the pepper and garlic salt then place them in a large baking tray and pour cream of chicken soup over them (use plenty) then bake at 350 for 20 minutes until nice and bubbly---then take a couple of cups of Bisquick and mix with 2/3 or even 1 cup of milk---start with 2/3 anyway make it so it can be kind of wet but not soaking wet and drop by large spoonful on the bubbling mixture and then bake another 15 minutes on 375 until the biscuits are browned
crockpots are great(Slow cookers)
slice up one garlic clove put in bottom of slow cooker
brown a roast of beef in fry pan on all sides in a bit of oil
on a plate put some dried herbs(salt/pepper/basil/parsley) rub the herbs all over the browned meat
put roast in crockpot
add 1 cup balsamic vinegar
put lid on, turn to low, cook 7-8hrs
make some mashed potatoes and gravy(add 1-2tbsp. of balsamic juices from crock pot to gravy for flavour)

dice up one onion
put carrots and onion in bottom of crockpot
brown pork chops in fry pan in a bit of oil
place in crockpot ontop of carrots and onion
season with salt/pepper
put some bbq sauce in a cup , add 3/4 cup of water, stir with spoon till thickens...pour over porkchops
Turn on low , put lid on..cook for 7hrs, make some 5min rice with it

Here are some ideas for a good meal:
1. Pork Chop Casserole: 4 - 6 bone-in porkchops (not too thick), seasoned salt, fresh ground pepper, 2 boxes Kraft Mac and Cheese, 1 yellow onion, cut into rings, olive oil and butter. Season the chops with seasoned salt and pepper, set aside. Heat 3 T olive oil and 1 T butter in skillet and add chops. Sear on both sides and set aside. Add onion rings and season with salt and pepper. Saute until translucent and carmelized. While chops and onions are cooking, bring water to a boil for the mac and cheese. Cook according to directions, drain and toss with butter, milk, and cheese sauce mix. Spoon into baking dish and top with seared chops. Top each chop with some of the onions and cover. Bake at 350 degrees for 40 minutes or until done. When serving, place some of the macaroni on the plate, top with a chop and some of the onions. This is a good dish with a simple green vege or salad.
2. Easy teriyaki chicken: 6 boneless, skinless chicken thighs seasoned with salt and pepper; 1 red bell pepper and 1 green bell pepper cored and sliced in to strips, 1 yellow onion, peeled and cut into strips, 1 can pineapple in its own juice, drained (reserve juice for rice), 2 cups teriyaki sauce, separated (use a pineapple based one for best flavor), jasmine rice. Cut thighs into quarters and place in pan heated with a little oil, or sprayed. Sear and add pepper strips and onion. Saute until tender. Add pineapple chunks and 1 cup teriyaki sauce. Cover and turn heat to low. Simmer for 20 minutes. Make jasmine rice according to directions, substituting the pineapple juice for some of the water. Before serving, add additional teriyaki sauce to thighs. Place rice on serving platter and top with chicken mixture. To round out this meal, or for folks with larger appetites, serve up some frozen potstickers with sauce or crispy egg rolls.
3. Thanksgiving Meatballs: 2 lbs ground lean turkey, 2 eggs, 1 tsp kosher salt, 1 tsp fresh ground pepper, 2 boxes Pepperidge Farm Cornbread stuffing mix, packaged or jarred Turkey gravey. Blend turkey with eggs and seasonings. Make stuffing according to package directions and let cool slightly. Add to meat mixture and form into meatballs. Place in baking dish and spoon gravey over the top. Cover and bake at 350 degrees for 1 hour. Serve with mashed potatos, gingered carrots and peas. Hot rolls are a nice addition too!

Farmhouse Sausage Chili
1 pound roll pork sausage
1 onion, chopped
2 cans (15 oz) diced tomatoes
1 can Chicken Broth
1 can (15oz) tomato sauce
1-2 Tablespoons maple or pancake syrup
1 ? teaspoons sage
2 teaspoons cumin
? teaspoon black pepper
3 cans Kidney Beans, drained
1. In large skillet, brown sausage and onions; drain
2. Add diced tomatoes, broth, tomato sauce, maple syrup, cumin, sage and black pepper; stir until well until well blended.
3. Simmer for 20 minutes.
4. Add beans and simmer for additional 15-20 minutes.
5. Serve topped with shredded cheddar cheese.
Chicken Pasta Skillet
1 pound boneless, skinless chicken, cut into small piece
1 medium green pepper, sliced.
1 small onion, chopped
1? cups water
2 cups rotini pasta, uncooked
1 jar (26 oz.) spaghetti sauce
1 cup mozzarella cheese
1. Spray large skillet with cooking spray
2. Add chicken and cook over medium heat for about 5 minutes or until evenly browned.
3. Add green peppers and onions, and continue to cook until tender, stirring occasionally.
4. Add water and bring to boil.
5. Reduce heat and stir in pasta while making sure it is covered with water.
6. Cover and simmer until pasta is done.
7. Stir in sauce and sprinkle with cheese.
8. Cover and reduce heat to low.
9. Continue to cook for 5 minutes or until cheese is melted.
CAJUN CHICKEN PASTA
SAUCE (do after chicken) :
3 tbsp. butter
3 tbsp. flour
2 c. milk
1 c. cream
OR
4 tbsp. butter
3 tbsp. flour
2 1/2 c. skim milk
1 c. cream
Melt butter; add flour and whisk. Add milk and cream all at once. Whisk on medium high (don't scald over) until smooth. Let boil while whisking constantly and let thicken.
BLACKENED CHICKEN (do first) :
1 tbsp. sweet paprika
2 1/2 tsp. salt (or less)
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. ground red pepper (preferably cayenne)
3/4 tsp. white pepper
3/4 tsp. black pepper
1/2 tsp. dried thyme leaves
1/2 tsp. dried oregano leaves
6-8 chicken breast halves (skinless/boneless) - salt each piece lightly
Diced green onions, diced tomatoes and diced olives
1. Heat large cast iron skillet over very high heat until it is beyond the smoking stage.
2. Combine seasoning mix ingredients in a small bowl.
3. Rub mix into chicken on both sides and coat well.
4. Sear on both sides until almost done (may leave center a little pink - it'll cook in sauce).
5. Cut up chicken across grain and add to hot sauce along with green onions.
6. Stir until done (15-20 minutes).
7. Serving suggestion: Serve over curly pasta that is buttered and mixed with Parmesan cheese. Top with more green onions, diced fresh tomatoes and diced black olives.
Ground Beef and Sausage in Red Beans and Rice
6 cups uncooked rice
1 pound polish sausage
1 teaspoon cayenne pepper
2 pounds ground beef
? cup chopped onion
2 cans Kidney beans, drained
1 can Pinto beans, drained
1 can Pork and Beans, undrained
1. Prepare rice in large pot per directions.
2. Cut sausage into 1-inch chunks and then quarter the chunks.
3. Cook sausage in large skillet until lightly browned. Season with cayenne pepper to taste before transferring to pot with rice.
4. Reserve grease and sauté ground beef for 5 minutes over medium-high heat. Reduce heat and stir in rice along with onions.
5. Sauté for t5 minutes more.
6. Drain well and return mixture to pot.
7. Stir in kidney beans, pinto beans and pork & beans with rice mixture already in pot.
8. Add a little water, if necessary, and simmer.
9. Yields 15 servings.
