Pork and Duck Rillettes
Rillettes de Porc et de Canard


This is the epitome of French country food.....
This not for everyone....most Americans would view this as very unhealthy....but for anyone who has had this....the very mention of it can make your mouth water....

3-3 1/2 pound duck... prep duck by cleaning well and cutting into 6 pieces and cut as much meat as possible from the bones...discard bare bones....keep the the bone that still have a good amount of meat on then...place in a single layer on a non reactive pan and sprinkle with 1/2 tsp salt....toss then add another 1/2 tsp cover and refrigerate for 24 hours


For the Rillettes
1 pound salt pork
1 pound pork shoulder
2 pounds of fatty pork(I save the trimmings from pork loins and chopsand freeze them to use for this)
1 1/2 cups water
3 1/2 teaspoons sea salt
10 peppercorns
10 allspice berries
handful of fresh thyme or 1 Tbsp dried
3 bay leaves

place salt pork in a large pot,add water to cover bring to a boil drain and rinse.

Cut the duck meat,salt pork,pork shoulder and fatty pork into half inch pieces....Place in large pot add the water,salt and herbs and spices, cover ,,bring to a boil then turn down to a simmer...cook 5 hours stirring now and then to make sure the meat is cooking evenly
remove from heat and let rest until it is cool enough to handle..
using your hand go though the meat...removing any bones ,herbs and stems
and breaking up any large pieces of meat...
transfer to a 6 cup terrine and let cool completely...cover and refrigerate for up to 2 weeks.....remove from fridge 1 hour before serving

get the fried tortila strips-or plain doritos.
have a good tomato based chicken stock.
heat and serve in bowls,very hot.
add tortilla
sour cream
chopped onion and cilantro,if you like chipote chile
cotija shredded cheese
pork rinds.enjoy

Poor people here in the philippines are actually making that. Because they have no money to buy any food, they do that one! And thats how it became our national Recipe! Easy and Slicky!

Irish stew.

Coat a pound of lamb shoulder pieces in flour, fry in butter in a saucepan until golden brown. Add chopped carrots, parsnips, turnip, onion, celery, etc. Fry again for a little while. Add a glass of red wine, reduce, top up with stock and season with salt and pepper. I personally add cumin and garlic at this stage. Simmer for 2 or more hours nad enjoy with potatoes.

what is hertiage? google that...greek recipe, italian recipe, irish recipe, polish recipe, german recipe, etc...

As for American recipes...we have Apple pie, thanksgiving dinner, anything with corn(the american indian first introduced us to that)New England Clam Chowder, the Hot Dog, the Hamburg, the Philly steak sandwich, and stuff like that....most everything else....we sort of knocked off from someone else.
