Can you freeze sliced potaoes?!


Question: I want to know if anyone has peeled and sliced raw potatoes then freeze them to use later? Is there any preservative or technique I should use?
Can I do the same for shredded (hash brown) potatoes?

You can definitley freeze raw sliced potatoes or cubes or any shape. I worked for the largest french fry company in the world (Lamb Weston) and frozen potatoes will last approximatly a year. Russets (Brown skin) work best and are top choice for manuufacturers.

Whenever you try to freeze a salad made with Miracle Whip or mayo, the dressing tends to separate. And yes, sometimes the potatoes turn an icky grayish or blackish color.

Your best bet is to share some of the left-overs with a friend or neighbor and creatively use up the remaining potato salad.

Potato Salad with Smoked Sausage

3 C. already-prepared potato salad
1/4 tsp. celery seed
1 tsp. yellow mustard
1 Tbsp. cooking oil
1 C. sliced smoked sausage
3 hard-boiled eggs, peeled and sliced

Mix the potato salad, celery seed, and mustard. Set aside.

Heat the oil in a skillet and sautee the smoked sausage until just heated through. Drain thoroughly.

Add the heated sausage to the potato salad mixture, and garnish with hard-boiled egg slices. Serve with garlic bread and fruit for a complete meal.

Cooked potatoes make the best candidates for freezing. Raw potatoes can be frozen with mixed results, but may develop a watery or grainy texture during freezing. If freezing casseroles or dishes containing unbaked potatoes, it's best to omit them during freezing and add them in fresh later. Cooked potatoes are excellent candidates for freezing and reheating.

yes you can just sprinkle with some lemon juice and tray freeze until you need them. Best to deep fry or pan fry from frozen state though.

I think your best bet would be to pre-cook and assure an air-tight seal in the packaging before you freeze. I'd say try it once and see what you results are after thawing before you do a large amount.
