Chinese/Jewish method.

Boil water in a pot. Throw in the chicken pieces (with or without the skin) or a whole chicken. Return to a boil add any spices you like to the water and Turn Off the burner (Yes, OFF!) let the chicken sit in the pot in the hot water covered for 1 hour. Drain and dice the chicken-Perfect every time.

You want it tender and stringy? Slow roast it.

chicken breast put it in the oven for 400 degreese

Put it in a crock pot with just enough water to cover the chicken and let it simmer all day on low. It will shred apart. I do this all the time and use the chicken for tacos, burritos and put over mash potatos with gravy or even over noodles. I also pour salsa over the chicken if I'm making burritos or tacos.
