CHICKEN BARBECUED WITH ROSEMARY AND
MARSALA

Marinade: 1 1/2 c. olive oil 1/4 c. dry Marsala wine 4 cloves garlic, crushed Juice of 1 lemon Salt and pepper to taste
Mix everything together for marinade. Cut chickens in 1/2 and marinate for 2 hours. Cook on grill until done basting occasionally with marinade.

AND

CHICKEN PARMESAN WITH MUSHROOM MARSALA
SAUCE

2 to 3 tbsp. olive oil
6 to 8 pats butter
1 c. seasoned bread crumbs
1 c. Parmesan cheese
1 tbsp. herbs
6 single chicken breasts (deboned)
1 c. flour with salt and pepper on plate
2 eggs, beaten in med. size bowl

SAUCE:

1 lb. fresh mushrooms
3 to 4 tbsp. butter
1/2 c. Marsala wine (to taste)

Pour oil center of 12 inch frying pan. Place pats of butter around oil; heat slowly to cooking temperature.
Combine bread crumbs, cheese and herbs on plate. Wash and pat dry chicken. Coat with flour; dip in eggs. Coat with bread crumb mixture. Set aside on rack; repeat procedure for all pieces. Fry all pieces until golden brown. Pour sauce over chicken just before serving. Yields 6 servings.

4 boneless chicken breast halves without skin
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon basil, dried
3 tablespoons butter or margarine
3 tablespoons olive oil
4 to 8 ounces fresh mushrooms, sliced (1/2 to 1 cup sliced)
1/2 cup Marsala wine
PREPARATION:
Pound chicken to 1/4" thickness between 2 sheets of plastic wrap. Combine flour, salt, pepper, and basil; mix well. Heat oil and butter in a heavy non-stick skillet over medium high heat. Dredge chicken in seasoned flour mixture.

Cook chicken until lightly browned on first side (about 2 to 3 minutes). Turn chicken and add mushrooms around the chicken pieces. Cook about 2 minutes longer, until lightly browned; stir the mushrooms. Add Marsala wine to pan. Reduce heat to medium-low; cover and simmer 10 minutes. Serve with hot cooked pasta.

Chicken Marsala

A delicious chicken and pasta dish.

Ingredients

5 Boneless chicken breast fillets
1/4 cup All-purpose flour
1/2 tsp Salt
1/4 tsp Pepper
2 tbsp Vegetable oil
2 cups Sliced mushrooms
1 clove Garlic, minced
1 (14 1/2-ounce) can whole tomatoes, drained and chopped
1 (8-ounce) tomato sauce
1/3 cup Marsala wine
1/2 tsp Dried basil, crumbled
1 pound Linguine, cooked according to package directions and drained.

Preparation
In large plastic food bag, combine chicken, flour, salt and pepper. Shake to coat chicken thoroughly. In large skillet, brown chicken in oil 5 minutes on each side; remove and set aside. In same skillet, cook and stir mushrooms and garlic 2 to 3 minutes. Stir in tomatoes, tomato sauce, wine and basil; simmer 1 to 2 minutes. Return chicken to pan; mix with sauce. Cover; simmer 5 minutes, turning chicken once during cooking. Serve over hot linguine. Makes 5 servings.

Olive Garden Recipe

Ingredients

4 ea Chicken half-breast, boneless & skinless
1/4 cup(s) Flour ("Wondra" preferably)
1/2 tsp Salt
Pepper to taste
1/2 tsp Oregano, dried
4 Tbsp Oil
4 Tbsp Butter (or margarine)
1 cup(s) Fresh Mushrooms, sliced
1/2 cup(s) Marsala wine


Procedures

Pound chicken breasts between sheets of "Saran Wrap" until about 1/4" even-thickness

Combine flour, salt, pepper and oregano, blend

Dredge chicken pieces in the flour, shake off excess

Heat oil and butter in frying pan over medium heat.

Cook the breasts on medium heat for about two minutes on the first side, until lightly brown

Turn breasts over to second side to cook, add the mushrooms around the chicken breasts

Cook breasts about two more minutes, until lightly browned on the second side, stir the mushrooms

When lightly browned, add Marsala around the chicken pieces, cover and simmer for about ten minutes
