This is the easy way to make ginger beer, where the ginger is simply soaked — just slightly fermented — for 24 hours (another method requires up to a five-day fermentation). Ginger beer is one of Jamaica's most popular soft drinks and is sold practically everywhere, from the supermarket to roadside stands.
This drink is wonderfully refreshing. If the ginger heat is too much, tame it with more crushed ice and some club soda.

Like what Cister said, ginger is indeed used in many Asian recipes. When preparing any meat, especially ground beef/pork, first turn up the fire, add oil, wait for the oil to warm up, then throw in diced ginger. Stir it around 'til it sizzles, then throw in the meat. It really helps flavor it.

simple pasta salad using fresh ginger
2 cups pasta of choice, cooked till tender, drain and cool
1 diced green pepper
1 diced red pepper
4-5 diced scallions(green onions)
1 tablespoon fresh ginger, minced fine
1 teaspoon minced fresh garlic
1/4 tsp. crushed red pepper
1/4 cup vegetable oil
1/4 cup soy sauce
chop veggies while pasta is cooking and pour the oil and soy sauce on them to marinade a bit. Add chilled pasta and crushed pepper. Stir till well mixed. if it seems a little dry, add more oil and soy sauce in equal amounts. I personally like lots of veggies in my salad and I have about half veg and half pasta. you can also add chopped cauliflower, broccoli, tomatoes, celery, bok Choy. what ever veg you like. Also, if you like it spicier, add more crushed red pepper. You can make this without the ginger but I love the flavor with the ginger and it is cheap and easy to keep.
