How do I make perfect white meringues?!

8 large egg whites (at room temperature)
pinch of salt
350g/12oz caster sugar
2 tsps/10g cornflour
pinch of cream of tartar
1 tsp/5ml white wine vinegar
4 drops vanilla essence

Preheat the oven to 180C/350F/Gas4. Line a baking tray with greaseproof paper. Whisk the egg whites with half the sugar and the salt in a clean bowl until soft peaks form. Continue beating while adding the remaining sugar until stiff and shiny. Sprinkle over the cornflour, cream of tartar, vinegar and vanilla essence and fold in gently with a metal spoon. Form peaks you your greaseproof paper and put in the oven, reduce heat to 150C/300F/Gas 2 and cook until nice a crispy on the outside..should be around 30 mins or so...this mix will rise a bit but they form the best peaks and the nicest meringues... enjoy

Buy them they are pretty cheap

2 egg white with 1 tsp cream of tartare and 30 g sugar make sure the egg white room temp and don t over mix they become oily looking

This is my all time favorite recipe for making meringues. They come out perfec everytime but NEVER try and bake meringues when the humidity is high. To make sure your meringues turn out as white as possible use clear vanilla. This is a cute and entertaining recipe too....Have fun and good luck.
