Question: How do you make them using rice paper?

This is a Thai dish, preferably an appetizer...and I like to eat them fresh (refrigerated) with peanut sauce.

You can buy the rice paper sheets from the asian grocer. Just wet the sheet with boiling water lightly and then place your filling in side and wrap it up. The best thing to do would be to use your fingers to dab the water over the sheet. It will become sticky so try not to stick them ontop of each other. Enjoy!

You don't need boiling water, as that is dangerous to work with and unnecessary in this recipe, lukewarm tap water will do fine. Fill a bowl with water and place a few sheets of the rice paper in at a time. Allow them to soften for a couple of minutes, or until they are soft and pliable. Take them out ONE AT A TIME (this is the point where they will stick together) and make your rolls. If you let the rolls rest with the seam side down, this will sufficiently seal them.
