Ice the whole cake with a thin layer of icing, and do not worry about the crumbs that will show up. This is called a "crumb coat". You then stick the whole cake in the fridge for about 20 minutes. This will harden up the first layer and you will have a perfect canvas for the final coating of icing. Use a lazy susan (a round turntable) to ice your cake and you can simply spin it and drag your knife around smoothly. Finally, make it perfect by rinsing your knife in hot water and smoothing out the top. Pipe dots around the edges to hide imperfections and place a pretty pile of raspberries or flowers in the center.

They use frozen prebaked cake layers, and assemble them frozen. The cold makes nice, clean layers.

So if you're baking your own cake, try chilling the layers (wrap in plastic so they dont' get dried out) or at least being sure they are totally cool from the oven. And dont' be stingy w/ the icing b/t the layers. Make a double or triple batch.

If you are asking about the very smooth icing, it is marzipan. I believe it is made from almond paste, and rolled out.

I do not know what you mean by fanc cake...but cakes with exceptional smoothness are either poured as in a ganache or rolled as in fondant.

Fondant can be made but for a novice, buy it. Roll out with cornstarch and smooth over a cake that has been frosted with buttercream.
You can tint the fondant and make cut out designs with it. Stick to the cake with a little drop of buttercream or paste of water and melted fondant or corn syrup.

Ganach is just to boiling cream with an equal amoung of semisweet chocolate melted in and stirred while kept on heat until smooth, adding drops of vanilla or other flavors, then pour over your cake....mmmm that is good. My cake is a box made by subing some of the water with Hersheys syrup and kahlua and Mexican vanilla.

For a birthday, I tie a beautiful metalic wired bow and stick it on the cake like a wrapped present!

they use fondant, you can get it anyplace they sell cake supplies (Walmart, Michaels, Pat Catans)
If you don't have those near you then try any large craft store
