Cinnamon Sugar Butter Cookies


Ingredients:
-----topping-----
3 tablespoons sugar
1 tablespoon ground cinnamon
-----cookies-----
2 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup dark brown sugar -- pack
1/2 cup sugar
1 cup salted butter -- soft
2 large eggs
2 teaspoons pure vanilla extract


Cooking Directions:

Preheat oven to 300:F. In a small bowl combine sugar and cinnamon for
topping. Set aside. In a medium bowl combine flour, soda and salt. Mix
well with a wire whisk and set aside In a large bowl blend sugars with an
electric mixer set at medium speed. Add the butter and mix to form a
grainy paste. Scrape sides of bowl, then add eggs and vanilla extract. Mix
at medium speed until light and fluffy. Add the flour mixture and blend at
low speed just until combined. DO NOT OVERMIX. Shape dough into 1-inch
balls and roll each ball in cinnamon-sugar topping. Place on ungreased
cookie sheets, 2 inches apart. Bake for 18-20 minutes. Immediately
transfer cookies with a spatula to a cool, flat surface.

My cook book has sugar cookies or just make the batter of the Toll house choclate chips and leave them out they are delicous and put cinnamon in them

Try this. We all like these cookies. I used to take these to work to share with coworkers.

OATMEAL RAISIN COOKIES

1 to ? cup sugar (I usually cut the sugar down from a cup because I don’t like baked goods too sweet)
2 cubes butter
2 large or medium eggs

2 cups stoneground flour (kind of level measurement) OR all purpose flour enriched with 2 Tab flaxseed meal
1 level tsp cinnamon
a touch of powdered ginger
? level tsp baking soda

2 cups old fashion oatmeal (not instant) – also not exact but kind of level measurement

1-cup raisin or other dried, cut up fruit (dates, apricots, prunes, currants etc.)
1 cup chopped nuts (walnuts, almonds, pecan, etc) – don’t make the pieces so fine to where the nuts become unidentifiable. Chunks are tastier in cookies but harder to form and to make cling to the dough when shaping the cookies.

Procedure:
Cream sugar & butter, then add the eggs and mix well.

Sift together the flour, cinnamon, smidgen of powdered ginger, and baking soda. Then add the sifted ingredients to the sugar, butter & eggs mixing in a little at a time.

Stir in the oatmeal a portion at a time. The mix will be stiff – a physical challenge for the hand, wrist and arm. Add a few drops of milk if you just can’t handle the stiff dough.

Last of all, stir in the dried fruits and nuts. You can add it all at once and mix only until the pieces are fairly evenly distributed throughout the dough.

Using 2 teaspoons, scoop dough (ping-pong ball size) and place evenly apart on cookie sheet. I can get three cookies across and usually about a dozen cookies on one baking sheet. Shape into rounds, flatten a little - about ? “ high.

Bake in preheated 350-degree oven 15- 18 min., or until cookies are lightly brown.

Cookies bake better if the sheet is in the center of the oven. I usually have one sheet baking while preparing the next sheet.
