Sugar would work fine. You'll have to a little more if you're measuring by tablespoon, since tablespoon for tablespoon, honey is sweeter. The final product won't have quite a nice rich flavour.

You might want to try brown sugar, if you have it. It goes quite well in most stir fries, from my experience.

molasses or brown sugar

Sugar wouldn't be "funny tasting" - but it wouldn't add the same touch of flavor as honey. Plus, if the recipe is depending on the honey to add some moisture, you'll need to add something else - water, white wine - to bring up the moisture content. Also, you could use Karo syrup, but again, it won't add the flavor honey contains.

Sugar should work just fine. You might want to use half the amount if you're going to use sugar, and increase the liquid a little bit. If you have molasses, you could try that instead of honey.
Any of them will change the flavor a bit, but there isn't usually that much honey in a stir fry recipe to give a lot of its own flavor. You could also use brown sugar.
