Can you use salad dressing on other things besides the obvious?!
Answers: Sure. I marinade meats in Italian Dressing. Ranch dressing for dipping vegetables. You can use dressings for basting grilled fish also.
Sure you can use it as a dipping sauce, you can use it as a marinade for meats, whatever you want.

Those nasty mixed veggies that they serve in restaurants? Put a quarter cup of your favorite dressing over them and toss after heating and draining off the cooking liquid.
Do not drain cooking liquid from veggies down the drain!! Put it in a freezer container and save for soup stock!! It is loaded with minerals and vitamins.
The only way I can think of that you might avoid that would be to remove the skin and the layer of fat underneath it.
I haven't really paid attention to even noticing whether my salmon has that or not. I eat everything but the skin. We live in the Pacific Northwest where we can get it nice and fresh.
The best use besides salads and dips is for a bath for chicken or pork chops before you bread them. Use Italian dressing instead of eggs. Then bread them and cook. Mmmmm
