Puttanesca Pasta Sauce
5 TB. extra virgin olive oil
1/2 - 1 tsp. red pepper flakes
1 chopped onion
1-6 crushed garlic cloves
2-6 chopped flat anchovy filets (no, it won't taste "fishy")
3 (14-oz) cans crushed tomatoes
1-2 cups slice kalamata olives
1-2 TB. capers
cooked pasta (I use 1 pkg. of mostaciolli, rigatoni or penne)
..... Heat oil in large skillet and add onion, garlic, pepper flakes and anchovies. Cook, stirring constantly, over medium heat about 2-3 min. (or until anchovies are disintegrated). Raise heat to high and add tomatoes. Cook, stirring occasionally, until thickened (about 15-20 min). Add olives and capers. Season with salt & pepper, if desired. Add cooked pasta to sauce, tossing well to coat evenly.

This is the MOST INCREDIBLE pasta sauce! You won't want any other sauce after tasting this one!

Quick beer bread with Kalamata olives, onions and herbs

Ingredients:
Makes one loaf
3 ? cups all-purpose flour
1 tsp salt
? tsp baking soda
1 tsp baking powder
1 large egg, beaten
1 ? cup Fischer beer
1/2 cup chopped onions
? cup pitted, chopped Kalamataolives
2 Tbs fresh, chopped mint
1 tsp freshly ground black pepper


Instructions:
Lightly oil a loaf pan and preheat the oven to 180 °C or 350 °C. Mix together the first four ingredients in a large bowl. Make a well in the center and add the egg, beet, onions, olives and herbs. Mix until combined. Pour the batter into the loaf pan and bake in the middle of the oven for about 40-45 minutes, or until a slim knife inserted in the center of the bread comes away clean. Remove the bread from the pan and leave to cool on a rack. Serve.

Lamb Patties on Fattoush Salad

This is Rachael Ray's deconstructed burger, with pita chips in place of the bun and the crunchy, lemony salad as garnish. Fattoush is a Middle Eastern bread salad. Peperoncinis are sold in the condiment section of the grocery store in jars.

Three 6-inch pita breads, separated in halves and torn into pieces

1-1/2 lb (750 g) lean ground lamb

1 cup Balkan-style plain yogurt

3/4 cup flat-leaf parsley leaves, chopped

2 cloves garlic, grated

1 tbsp ground cumin

1 tsp dried oregano

1-1/2 tsp paprika

1 tbsp steak seasoning

Pinch ground cinnamon

6 tbsp extra-virgin olive oil

1/2 seedless cucumber, cut into bite-size dice

1 green bell pepper, cut into bite-size dice

4 ribs celery, chopped

1/2 large red onion, chopped

3 tomatoes, seeded, diced

1/2 lb (225 g) feta cheese, crumbled

1/2 cup kalamata olives, pitted, chopped

6 pickled peperoncini peppers, chopped

2 lemons, halved

Salt + pepper to taste

Put pita on baking sheet. Bake in preheated 375F oven until crisp, about 8 minutes.

In medium bowl, combine lamb, yogurt, 1/4 cup parsley, garlic, cumin, oregano, paprika, steak seasoning and cinnamon. Form mixture into six patties.

Heat large non-stick skillet over medium high. Add 3 tablespoons oil until it ripples. Add patties and cook, in batches if necessary, about 6 minutes per side for medium rare.

In a medium bowl, combine remaining 1/2 cup parsley, cucumber, bell pepper, celery, onion, tomatoes, feta, olives and peperoncinis. Squeeze lemons over salad. Add remaining 3 tablespoons oil and toss. Season with salt and pepper. Add pita bread; toss again.

To serve, divide salad over six plates. Top each with a patty.

Makes 6 servings.

add olives to any salad, black or green olives are very high in potassium and vitamin E. you can add olives to meat loafs and any veggie dish. Black olives go good in most fruit dishes too.

This recipe for orzo pasta salad is a main stay recipe in my house. It is great as a side salad with grilled meats, and is also nice to eat alongside of a hearty sandwich. You can make this into a main dish by adding cooked diced chicken or shrimp. If you want it extra spicy, I would add cayenne pepper to the dressing.

Orzo Pasta Salad

(Prep Time: 25 minutes)
1 pound orzo pasta
4 green onions, chopped
6 ounces cherry tomatoes (about 20)
1 Tablespoon fresh dill, chopped
1 cup pitted kalamata olives, chopped
? cup feta cheese


Dressing:
2/3 cup light extra virgin olive oil
4 Tablespoon red wine vinegar
1 Tablespoon balsamic vinegar
1 teaspoon mustard
1 teaspoon oregano
? teaspoon salt
? teaspoon black pepper
? teaspoon sugar


1. Combine all of the salad ingredients in a large mixing bowl. I recommend quartering the cherry tomatoes.
2. Combine all of the dressing ingredients in a glass jar with a lid. Shake to mix.
3. Initially add about 1/3 cup of the dressing to the salad mixture. Adjust seasoning and amount of dressing to suit your tastes. If you prepare the pasta salad in advance you will probably need to add additional dressing as the pasta absorbs the dressing over time.


Serves: 10 as a side dish. You can add shrimp or other protein and make this a main dish as well
