I Need Help Frying Chicken, can You Help?!


Question: Hey. I'm actually pretty good and have it ALMOST down perfectly.

Only one problem!

I want to get the chicken (or the crispy part) to be a DARK BROWN when I get it out of the fryer

Why is it staying such a light color?

The batter or breading will stay fairly light if you are using a clean oil. You can add a little sugar to it to get a darker color , the sugar will caramalize and go dark .

If you fry it longer it may darken more but the chicken will get dry.

It's not supposed to be dark-dark-dark; that'd just be nasty!
It supposed to stay light.

Here is a simple solution which I have used successfully for 50 years: add paprika to the flour breading mixture.

I also sprinkle paprika after brushing the roasting chicken with a little oil or butter to turn the roast or baked chicken brown. Don't you notice that often, the baked chicken stays white even when it is fully cooked? The paprika solves that as well.

Most of the time if it is to light your grease temperature is not high enough. It should be 375. Check the temperature of your oil.

If you are using oil that has been used before this will effect its frying ability ....If that isn't the case...you simply need to let it fry a little longer.

The paprika man is right! We use it always here in the South where I live. You need to use one teaspoon for each cup of flour. If you make the crust to dark brown by frying only, it will not taste good. Trust me! Only use the non spicy paprika.

I love to cook. I have the perfect answer for you.
Fisrt you need to wait until the oil is very hot before you place the chicken in the frying pan.
Once the oil is hot, place the chicken in the pan and fry it. As soon as one side is brown, turn it over on the other side. Once that side is brown also keep turning it until all the sides are brown. Next ,lower the hear and simmer it down. Yummy..yummy

I never fry mine all the way Turn up the heat and when it gets the color you want, finish it off in the oven.
