i also use garlic powder, dont forget the sea salt and black pepper..rosemary nis good too!

i use powdered mustard, or chili powder. There's a lot of things you can use. One thing that is really good is to get the ranch dressing packets that are powdered and you mix yourself and use that on them.

Of course i'm assuming a baked hot-wing style. but it will work on larger wings too

i atually throw in almost any spice cos they still taste good. for a sweet chilli one throw in a bit of parika and lemon and pepper seasoning. for a sticky wings throw in some jam and worschestire sauce(in south africa we actually use something called chutney - its just a mix of sweet sauce and has some fruit) if u just want it plain just add any seasoning to spice it up. or make some type of marinade(for peri peri - i use tomato sauce(ketchup), some crushed garlic, oil and paprika and per peri spice)

Cut off the tips and discard. Cut the wings in half at the joint. Arange them in a single layer in a 9X13" pan. Mix together 1 bottle of soy sauce, 1/2 cup sugar (brown is best, but white is ok) 1 tbl. garlic powder. Pour over the wings and let them marinate for about 1 hour. (longer is better) Bake for 40 min at 350 degrees. Pour off the sauce and crisp them under the broiler.

Teriyaki Chicken Wings
Wings:
2 dozen chicken wings, about 3 1/4 pounds, rinsed and patted dry
Salt and freshly ground black pepper
Olive oil
1 tablespoon sesame seeds, toasted in a skillet over medium heat until lightly browned
Leaves from 1/2 bunch fresh cilantro, chopped
Teriyaki Sauce:
1 cup low-sodium soy sauce
1 cup grapefruit juice
1/4 cup hoisin sauce
1/4 cup ketchup
3 tablespoons rice wine vinegar
1/4 cup brown sugar
1 fresh, hot red chile, halved
5 garlic cloves, halved
2-inch piece fresh ginger, smashed with the side of a large knife

Preheat the oven to 400 degrees F.
Season the chicken wings with salt and pepper and drizzle a little olive oil on them to prevent sticking. Lay the wings in a single layer on a baking sheet. Bake for 30 minutes or until the skin gets crispy and the wings are cooked through.

Meanwhile, combine the teriyaki sauce ingredients in a large saucepan. Simmer over low heat and reduce until slightly thickened. Pour the sauce into a large bowl. Dump the wings into the bowl and toss to coat them with the sauce. Transfer to a serving platter and sprinkle with the sesame seeds and cilantro. Serve hot.
Makes 12 servings

normally my mom makes a marinade with a whole bunch of spices she likes in it and lets it set overnight flipping the container over and over a bit. Then it's covered with sauce. It tastes really good, it takes a while though.
