A mothers dinner?!


Question: does anybody have any i dea's of what i can cook my mum for dinner , nothing like curry or big meals as we have had a roast. just a little something please , thanks in advance!

Here are two good salad recipes. You can add some diced, cooked chicken to either to make a nice light dinner:

Caesar Coleslaw

1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing

Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!

Chinese salad
Dressing Ingredients:
2/3 cups oil
1/2 cup sugar
1/4 cup vinegar

Salad Ingredients:
1 pkg. cole slaw mix
2 bunches of green onions (chopped)
1 cup sliced almonds
1 cup sunflower seeds
2 pkg. chicken ramen noodles (broken up, with seasoning)

Mix dressing ingredients and let sit overnight, do not refrigerate. The next day… Mix salad ingredients. Add dressing and toss. Let stand for a few hours.

EDIT: I'd mix the dry ramen noodle favor packet powder with the dressing first. Then add the rest of the stuff.

Here's my favorite sandwich recipe:

Grilled Cream cheese sandwiches:

Cut very fresh french bread into 1/2 inch slices. Butter one side of each, put one side on pan. Cut a chunk of cream cheese to taste (mine are about 1/4 in to 1/2 inch thick). Spread on the bread. Top with the best tomatoes you can find. Salt and pepper. Add the other slice of bread, buttered side up. Grill one side until brown. Flip over, grill the other side until brown.
MMMMMmmmmm.

Soup might be good, also. I'm making this one today:

Southwestern Soup

1 lb. ground beef
1 medium onion chopped
1 can black beans, undrained
2 cups frozen white or yellow and white corn kernels
1 can diced tomatoes, undrained
1 can Rotel tomatoes, undrained
1 lb. Mexican Velveeta, cubed

In large skillet, brown beef and onion, drain. Combine all ingredients in crockpot, cover. Simmer on low, stir occasionally until cheese is melted. Continue to simmer until heated through, 4 hours.

Here's a nice soup, also:
Hearty Hamburger Soup

2 lb. hamburger
1 small onion
2 cans alphabet soup
2 cans cream of tomato soup
? big block of Velveeta, cubed

Cook hamburger with onions. Drain. Add the rest of ingredients. Cook on low, stirring frequently, until cheese melts and it’s heated through. Could be made in crock pot by cooking the beef and onions and putting all ingredients together in the crock pot until heated through…about 4 hours on low.

Make chicken and pasta.
Theres an awesome recipe for it on Rachael Ray.com. She cooked it on her show on January 30th, 2008 so you can search that. It doesn't take too long and its really easy to make, I made it and I just turned 18.

Something easy and light....how about a chicken breast bone in or boneless and cover it with Campbells mushroom soup straight from the can...don't add milk. Serve with small parissienne potatoes but instead of just boiling them, after they are boiled, put them in your frypan in butter and garlic and brown them up so they are golden brown or if you have some time to spare, slice the raw lpotatoes into thin slices, dip in italian dressing and put on a wire rack. Bake in the oven for 30min or until crispy. These are delicious.

My baby girl makes this for me all the time-

Heat olive oil in a pan and add jumbo shrimp,cook until not quite done, about 4 minutes. Add 1 jar basil tomato pasta sauce and put in a casserole dish, sprinkle with feta cheese and put in oven at 350 for 15 minutes. Serve with hot cooked spaghetti or orzo.
