Just curious what do you put in your meatball recipe?!

Mini Chicken Sausage Meatballs with Gnocchi and Tomato Sauce
Salt
1 pound gnocchi ( potato dumplings) from refrigerated or frozen foods section of market
1 1/2 pounds ground chicken
1 tablespoon grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 teaspoon fennel seeds, 1/3 palm full
1/4 cup tender sun dried tomatoes (available in pouches or tubs in produce section)
20 leaves fresh basil, divided
2 tablespoons extra-virgin olive oil, plus some to drizzle
1 medium onion, finely chopped
1/2 teaspoon crushed red pepper flakes
1 (28-ounce) can crushed tomatoes
1 (8-ounce) can tomato sauce
Grated Parmigiano-Reggiano or Romano, to pass at table

Preheat oven to 400 degrees F.
Bring a pot of water to boil for gnocchi. Season the water with salt, add gnocchi and cook according to package directions.

Place chicken in a medium bowl with grill seasoning and add the fennel seeds. Pile sun-dried tomatoes on top of each other in small stacks then slice into thin strips. Coarsely chop the thin strips and add to bowl. Stack 10 basil leaves together then roll them up into a log. Shred the basil by thinly slicing the log. Add basil to the bowl. Drizzle some extra-virgin olive oil over the chicken, mix meat together and roll into mini balls, 1 1/2 inches across, and arrange on a nonstick cookie sheet. Bake at 400 degree F for 10 to 12 minutes or until firm and lightly golden.

Preheat a large skillet over medium heat. Add 2 tablespoons extra-virgin olive oil, the onions and crushed red pepper flakes. Cook 5 minutes, stirring frequently. Stir in the tomatoes and sauce and season with salt and pepper. Simmer over low heat. Stir in the remaining 10 leaves of basil, whole or torn.

Drain gnocchi and remove balls from oven. Toss gnocchi and meat balls with sauce and serve with grated cheese to pass at table.

Italian Meatballs..I use three types of meat to make these so juicy and good.
INGREDIENTS
1 pound ground beef
1 pound ground turkey
1 pound ground Italian sausage
1 large onion, diced
2 eggs
1/2 cup Italian-style seasoned bread crumbs
1/2 cup quick cooking oats
2 tablespoons Italian-style seasoning


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Combine ground meat, onion, eggs, bread crumbs, oats, and seasoning in a large bowl. Shape into 2 inch diameter balls.
Heat about 1/2 inch vegetable oil in a large saute pan. Brown meatballs in hot oil for about 5 minutes. Transfer to a glass baking dish.
Bake in preheated oven for 25 minutes.

minced beef, onions, celery, wholemeal breadcrumbs, egg, black pepper,
and the secret ingredient to making them taste fab - a dollop of red pesto.
Put all ingredients in a mixer with the chopping blade, when mixed
form them into meatballs
brown them in a frying pan
drop them in a good homemade tomato and basil sauce and bake in the oven.
Serve with your favourite pasta
Enjoy with a bottle of red wine...

without going into the many recipes ill add one note, for some reason dried onion flakes mixed with the ground beef seem to add an incredible flavor,better then fresh onions,also frying the meatballs till they are seared,i dont mean brown i mean some darker high heat,not quite charred increases the flavor

this is one kind of Greek meat balls and i love them
we use yogurt for dipping the balls in!!!!!!!!!
1 tablespoon olive oil
1 clove garlic, minced
1 jalapeno, seeded and minced
1 large shallot, minced
1 pound ground lamb
4 ounces salt pork, ground or finely minced
Zest of 1 orange
2 tablespoons chopped mint
Freshly ground black pepper

After trying almost every recipe known to man - lol! - this is what I've come up with that tastes the best!

1 1/2lb ground chuck
1 lb sweet Italian sausage
1/2 cup flavored bread crumbs
1/2 cup plain bread crumbs
3-4 cloves garlic, minced
1 small onion, minced
2 eggs, beaten
1 tsp dried oregano
1 tsp dried basil

Mix it all together and form meatballs...I do ones a little bigger than golf balls. Place on baking sheets and bake at 350 F for about 35-40 minutes, rolling them around every 10-12 minutes.
Pretty simple...pretty garlicky, so if you are not a garlic fan (as you all know I am), reduce the amount! You can also use just flavored breadcrumbs instead of half plain, half flavored - I do that so I can use my own herbs.
If you like yours with cheese add about 1/2 cup of grated Parmesan to them before baking.

Sour Cream meatballs

1.5 lbs ground chuck
1/2 c sour cream
1 tsp crushed garlic
pepper
garlic salt
1 tsp dill

Mix all together, form into balls, bake at 375 for 25 min. Drain and place into 9x13 baking dish and mix sauce as follows:
1 c sour cream
1 can cream of mushroom
garlic powder
pepper
1 tsp sugar
2 tsp dill, more if you like

Mix sauce and pour over meatballs. cover with foil, bake at 375 for 45 min to 1 hour. Serve over rice. Yum!!!


BBQ Meatballs
1 pkg frozen swedish meatballs
1 onion, cut into big chunks
2 bottles Sweet Baby Ray's bbq sauce
1 TBSP crushed garlic
1 bottle beer
2 TBSP brown sugar
dash vinegar......mix all together and cook in slow cooker on low for 4-5 hours till hot.
