Eggplant Parmesan


3 eggplant, peeled and thinly sliced
2 eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
1 (16 ounce) package mozzarella cheese, shredded and divided
1/2 cup grated Parmesan cheese, divided
1/2 teaspoon dried basil

Preheat oven to 350 degrees F (175 degrees C).
Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
Bake in preheated oven for 35 minutes, or until golden brown.

Yummy here is my favorite way to cook it

Wash eggplant. lay it on its side and make a slit down the center. Stuff it with several sliced up cloves of garlic.
Bake it in the oven for about an hour until skin is ready to come off.
While the eggplant is cooking. finely chop up a small onion, about 5 sprigs of fresh cilantro, and a couple sprigs of thyme, and a hot pepper if you like them.

when eggplant is tender- scoop out the meat of it into a bowl, add the onion and other stuffand mix it up.

Heat a skillet with several tablespoons of oil, when oil is hot, add about a half teasppon of cumin seed to it and few it for a minute or so, till the seeds get almost black. pour the oil over the eggplant.

Serve with fried bread

heres a real easy recipe for it.

2 cups of flour
2 teaspoons of baking powder
a bit of salt
enough water to mix dough. about a cup, pour in gradually about a 1/4 cup first itme then a bit more as you stir.
oil for frying

stir flour baking powder and salt together, water together till it look like big clumps getting ready to come together. Take your hands now and mash it all together. pour a bit more water into what is left of the flour and mix it together, a little bit of water at a time. Form a ball with the dough. let sit covered with a towel for about 10 minutes. Start heating oil- Make about 8 balls out of the dough. Roll them out very thin.dont stack them on top of each other, just move them of to the side.
oil should be hot enough that when you put a bit of flour in it it sizles.
Put one piece of rolled dough at a time in the oil, fry for about 20 seconds, bread should puff, turn over and fry for a few more second.
Serve with a mango chutney if available.

6 eggplants
1 cup olive oil
2 cloves garlic, minced
5 tablespoons fresh mint leaves, chopped
2 tablespoons Balsamic vinegar
Salt and pepper

Cut the eggplants into wedges, about two inches wide, leaving the skin on. Heat the oil in a heavy frying pan, and once hot, drop in four or five of the wedges. Cook until soft and brown, turning over once during the cooking period. Once cooked, place on a plate covered with paper towels to drain. Continue cooking the remaining eggplant wedges in this manner.

Once all the the wedges have been cooked, place them in an attractive manner on a serving plate. Sprinkle with the Balsamic vinegar, minced garlic, salt and pepper and mint. Serve at room temperature.
