How do you keep meat loaf from falling apart when you cook it?!

The reason your meatloaf is falling apart is because you need something to bind it together. I typically add an egg or egg substitute and bread crumbs to my meat as a delicious binder. I also add some Romano cheese and a bit of tomato paste on occasion! Yummy!

Add an egg and bread crumbs to bind it. Use whatever seasonings you want. But you have to have bread crumbs and egg.
add more eggs, or as i used to do, wrap it in bacon!!!!!! yumm.
use all your ingredients JUST ADD 1-EGG PER 3 LBS OF MIX you can also increase the sauce to moisten it more .
Try this Emeril meatloaf...won't fall apart..gauranteed..
***Mighty Meaty Meatloaf***
2 tablespoons vegetable oil
1 cup chopped yellow onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1 tablespoon minced garlic
1 1/2 teaspoons salt
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
1 1/2 pounds ground beef
1/2 pound ground pork
1/2 pound ground veal
2 eggs
1/2 cup heavy cream
1/4 cup ketchup
1 1/2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
2/3 cup fine dried bread crumbs
Glaze:
1/2 cup ketchup
2 tablespoons light brown sugar
1 teaspoon Worcestershire sauce
1/4 teaspoon Emeril's Hot Sauce or other red hot sauce, optional
Position rack in center of oven and preheat the oven to 350 degrees F.
Heat the vegetable oil in a skillet over medium heat. Add the onion, celery, bell pepper, garlic, salt, basil, thyme, and black pepper. Cook, stirring, until the onions are soft and lightly golden, about 6 minutes. Remove from the heat and set aside to cool.
In a large mixing bowl, combine the ground beef, pork, and veal with a wooden spoon or with clean hands. Be sure to wash up afterward.
In a medium mixing bowl, combine the eggs, heavy cream, ketchup, Dijon mustard, and Worcestershire sauce, and whisk to combine. Add the egg mixture to the meat mixture along with the cooled vegetables and bread crumbs. Mix with your hands or a wooden spoon until thoroughly combined.
Transfer the mixture to a 9 by 5 by 3-inch loaf pan. Using your fingers or the back of the wooden spoon, smooth the top into a rounded loaf shape. Wash hands again.
To make the glaze, combine the ketchup, brown sugar, Worcestershire, and hot sauce, if desired, in a small bowl. Stir to blend. Spread the mixture evenly over the top of the meatloaf. Bake the meatloaf for 1 hour and 15 minutes.
Using oven mitts or pot holders, carefully tilt the pan away from you and drain off the excess grease from the pan, An adult should help you here. Be careful, hot grease can really burn. Slice to serve.
I add a little bit of sausage mice wich is quite sticky so it makes it all stick together. When I do rissoles I do 2 onions 1 carrot 500g of mince and 200g of sausage mince
Breadcrumbs or oatmeal, and eggs act as a binding agent. When this happens you did not use enough of either one. I use one egg for each pound of meat. I've used several recipes from allrecipes.com. Each one was delicious. Also, a meatloaf is great because you can modify any recipe to your taste.
by adding something called a "binder". A binder can be one of numerous things..the most common being eggs. just one egg will help to "hold" a meatloaf together. People also use a combination of milk & eggs as well as fresh bread or bread crumbs.
I made tons of different meatloaves and one of my easiest weekday meals is BBQ & salsa meatloaf.
take one package of ground turkey
crack one egg into a bowl and beat it
add a 1/4 cup of salsa to the ground turkey mix
add a dash of steak seasoning (my seasoning has cumin, cracked pepper, salt, celery seed, onion powder, garlic powder, paprika)
add the egg to the mix (meat mixture)
add breadcrumbs I use the italian variety but any type of crumbs even regular bread cubed up into small pieces would work add enough to cover the top of the meat mix and start using those hands to mix it..
form into your favorite shape ( a loaf perhaps)
and add your fav BBQ sauce on top or ketchup if you prefer
I add quartered potatoes to the sides of the pan where my meatloaf cooks and eat those yummy pieces up!!!
bake at 375 for about 30 min..

you need to make sure it has just the right amount of liquid with the right amount of binding ingredients. like bread crumbs or eggs. the liquid can be water, or beef broth, I use worcestshire (sp) sauce too. Not too much liquid, but you don't want it to dry out.
