They are actually pretty easy to make, but clean up can be horrible, so I suggest you use pans that you might possibly have to toss out.

5 T. butter
1/2 c. light corn syrup
3/4 c. granulated sugar
1 tsp. your flavoring of choice (unless using cinnamon, only 1/2 tsp.)
6-8 drops food coloring to match flavor

Grease large baking sheet with 1 T. of the butter (I put down wax paper first and it seemed to help a bit). Arrange 18 lollipop sticks on the baking sheet, allowing 2 1/2 inches between the sticks.

In large saucepan, combine remaining butter, corn syrup, and sugar. Cook over medium heat, stirring often, until the sugar dissolves. Insert a candy thermometer in the mixture and cook, stirring, until the thermometer reaches 270 degrees. Remove from heat and stir in the flavoring and food coloring.

Drop 1 T. syrup onto the end of each stick, alternating ends.

Let cool thoroughly before lifting, about 10 minutes. Store by wrapping each lollipop in cellophane and keep in an airtight tin. They will keep that was for up to 3 weeks.

Makes 18 lollipops.

Step 1:
Line a large baking sheet with aluminum foil and arrange lollipop sticks 4 inches apart.

Step 2:
In a heavy saucepan over medium heat combine 1 cup of sugar, ? cup of water, and 2 tablespoons light corn syrup and heat until sugar dissolves. Cover and boil mixture 1 minute to wash down any sugar crystals. Remove the cover and boil the syrup until it registers 310oF on a candy thermometer.

Step 3:
Immediately remove the saucepan from the heat and set on a rack. Let the syrup cool 5 minutes and then stir in 4 to 8 drops of food coloring and 2 to 3 drops flavoring oil.

Step 4:
Pour syrup in 2 to 3 inch puddles over one end of each lollipop stick. Allow candy to cool completely. Wrap each lollipop in plastic wrap or cellophane and tie with a ribbon.
