I like this because it's easy ,and it makes 2, so you can enjoy one now, and freeze the other for later...

***Banana Bread***

2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup sugar
4 very ripe bananas
1 teaspoon vanilla
1/2 cup vegetable oil
1 cup coarsely chopped walnuts
1 teaspoon cinnamon

Preheat oven to 350 degrees. In a medium bowl combine flour, baking soda and powder, salt. In a large bowl cream together eggs and sugar. Stir in mashed bananas, vanilla, oil and cinnamon. Stir in flour mixture, a third at a time, until just combined. Add nuts. Divide batter into two 9x5 loaf pans. Bake for about 1 hour

I make a banana bread from a recipe by Betty Crocker.
The link is below...the only thing different is I add a 1tbs of cinnamon and 1/4 tbs of nutmeg and sometimes a 1/2 -1 cup of blueberries or walnuts.

1/2 cup solid vegetable shortening
1 cup sugar
2 eggs
3/4 cup mashed ripe bananas
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups flour
1/2 cup macadamia nuts
Pinch of cinnamon

Preheat the oven to 350 degrees.
Oil and flour a 9x5x3-inch loaf pan.

Using an electric mixer, cream the shortening and sugar. With the mixer running on medium speed, add the eggs one at a time. Add the bananas and mix well. Add the baking soda, salt, flour, nuts and cinnamon and mix thoroughly. The dough will be sticky.

Pour the dough into the prepared pan and bake about one hour or until the center is brown and set.

Banana Bread
Ingredients:

1 cup butter, softened
2 cups sugar
7 large ripe bananas, mashed
1 1/2 teaspoons vanilla extract
4 eggs, slightly beaten
3 cups flour
1/2 teaspoon salt
2 teaspoons baking soda



Directions:

Makes two loaves.

1. Cream the butter and sugar. Blend in the bananas, vanilla and eggs.

2. Whisk together the dry ingredients.

3. Add to the banana mixture and mix until just combined. Pour into two greased 9x5 inch loaf pans.

4. Bake at 350F. Check on the bread after 35 minutes (it may take up to 60 minutes). Banana bread is done when a toothpick inserted in the middle comes out clean. Cool the banana bread in the pan for 10 minutes then cool completely on a wire rack.

This recipe can be easily divided in half to make 1 loaf.


Cabana Banana Bread

? cup butter, softened (1 stick)
2 csup firmly packed light brown sugar
4 med. size ripe bananas, mashed
4 eggs
? cup veg oil
1 cup pineapple yogurt
? cup crushed pineapple, very well drained
1 tsp. vanilla
? tsp. coconut extract
3 cups.flour
2 tsp. baking soda
? tsp. salt
? cup shredded coconut

Oven at 350
Cream butter and sugar till light and fluffy. Beat in bananas, beat in eggs one at a time. Blend in oil. Mix in all remaining ingred. except coconut. Divide batter between tow greased loaf pans. Sprinkle coconut evenly over tops of loaves. Bake 50-60 mts. Let cool 5 mts before removing from pans.

This is one of my favorite recipes...the pineapple is a nice addition!

Pineapple Banana Bread

3 cups plain flour
2 cups sugar
1 tsp. baking soda
1 tsp. cinnamon
1 cup chopped nuts (walnuts, pecans or macadamia)
2 tsp. vanilla
3 eggs, beaten
1 1/4 cups vegetable oil
2 cups mashed bananas
1 (8 oz.) can of crushed pineapple (well drained)

In a large bowl combine flour, sugar, baking soda, and cinnamon; stir in nuts. Set aside. Combine remaining ingredients in another mixing bowl; blend well. Pour wet ingredients into dry ingredients and stir until just moist. Pour into 2 greased and floured loaf pans. Bake at 350° for approximately 1 hour 30 minutes. Check center of loaf with toothpick (I use an uncooked spaghetti strand) and if it comes out clean, its done. Cool 10 minutes before removing from the pan. Then hire armed guards to keep the loaves safe until it is time to eat. Happy baking!

My family loves this one, the cream cheese gives it a nice pop
Banana Cream Cheese Bread

8 oz cream cheese, softened
1 cup sugar
1/4 cup margarine
1 cup bananas, mashed
2 eggs
2-1/4 cups flour
1-1/2 tsp baking powder
1 cup nuts, chopped ( I use pecans )


Combine softened cream cheese, sugar and margarine, mixing well until blended. Blend in bananas and eggs. Add combined dry ingredients, mixing just until moistened. Fold in nuts.

Pour into greased and floured 9 x 5 inch loaf pan. Bake at 350 degrees F for 1 hour and 10 minutes. Cool 10 minutes before removing from pan. Makes 1 loaf

sour cream is the secret to any tasty banana bread. If you have a recipe that calls for that, you are good. If you don't. Just add a 1/2 a cup......

1 slice of bread & butter
1 Banana

unzip the banana
take the bread and butter
place banana in bread and butter, eat add sugar to flavour
