MONTE CHRISTO SANDWICH

2 slices bread
1 tsp. mayonnaise
1 tsp. prepared mustard
2 slices cooked ham
2 slices cooked turkey meat
1 slice Swiss cheese
1 egg
1/2 c. milk

Spread bread with mayonnaise and mustard. Alternate ham, Swiss and turkey slices on bread.Beat egg and milk in a small bowl. Coat the sandwich with the egg and milk mixture. Heat a greased skillet over medium heat; brown the sandwich on both sides. Serve hot. Makes1 sandwich.

GRILLED TOMATO, SMOKED TURKEY AND SWISS CHEESE SANDWICH

1 C. sour cream
1/4 C. green onions, chopped
2 Tbs. Dijon mustard
1 tsp. dried thyme
12 slices whole wheat bread
1 lb. sliced smoked turkey breast
8 slices Swiss cheese
4 tomatoes, sliced
Butter

Combine sour cream, green onions, mustard and thyme together and mix well. Spread one side of each piece of bread with butter and the other with the sour cream mixture. Place several slices of turkey (depending on thickness), a slice of cheese and tomato on the side of the bread with the sour cream mixture. Place sandwich butter-side down in a skillet and brown on both sides. Serve warm.

CHICKEN AND BISCUITS CASSEROLE

1 (16 oz.) package frozen mixed vegetables
2-1/2 c. cubed cooked chicken
1 (10.75 oz.) can condensed cream of chicken soup, undiluted
3/4 c. milk
1 1/2 c. shredded Cheddar cheese, divided
8 slices bacon, cooked and crumbled (optional)
1-1/2 c. biscuit/baking mix
2/3 c. milk
1 (2.8 oz.) can French-fried onions

In a large bowl, combine vegetables, chicken, soup, milk, 1-cup cheese and bacon (optional). Pour into an ungreased 13-in. x 9-in. x 2-in. baking dish. Cover and bake at 400 F. for 15 minutes. Meanwhile, in another bowl, combine biscuit mix and milk. Drop batter by tablespoonfuls onto chicken mixture. Bake, uncovered, for 20-22 minutes or until biscuits are golden brown. Top with onions and remaining cheese. Bake 3-4 minutes longer or until cheese is melted. Makes 6 servings.

SLOPPY JOE CASSEROLE

8 oz. shell or elbow macaroni
1 envelope sloppy Joe mix
1 lb. ground beef, cooked and drained
1 (6 oz.) can tomato paste
1 (8 oz.) can tomato sauce
1 c. water
16 oz. cottage cheese
1 c. grated cheddar cheese

Cook pasta and drain. Brown meat and add Sloppy Joe mix, tomato paste, tomato sauce and 1 cup water. In a greased 2-1/2-quart dish layer half the pasta, half the cottage cheese, half the meat sauce. Repeat. Top with cheese. Bake at 350 F. for 40-50 minutes.

CREOLE FRANKS

5 slices bacon, diced
1/2 c. onion, chopped
1 c. unsweetened pineapple juice
3/4 c. catsup
1/8 tsp. chili powder
1-1/2 lbs. frankfurters, sliced
1/4 c. green pepper, chopped

Cook the bacon in a large skillet, but do not crisp. Add onion and cook until tender. Add green peppers. Cook 2 minutes. Stir in pineapple juice, catsup and chili powder. Add frankfurters and simmer for 10 minutes. Serve over mashed potatoes. Add a green salad, and crusty bread with butter to complete the meal.

A grilled cheese and bacon sandwich with a side of home made fries. Ketchup and Vinegar of course! A big dill pickle wouldn't go amiss either.

fried bologna sandwich, tomato soup!!!!

I'd have a blt sandwich...fry your bacon, slice tomato, toast bread...put it all together with lettuce and mayonnaise.

Bagel Sandwich with turkey, bacon, lettuce, melted cheese, any condiments you would like

How about a tuna salad sandwich and potato chips. Use may and lots of pickle relish in the tuna salad.

How about an omelet? I love breakfast for lunch, especially on Sunday.

You should make my famous ham, cheese, and egg sandwhich with a side of coca cola.Ummmm

I have just bought a loaf of bread, so it will be nice fresh sandwiches for me.
Tomato and Egg.

Corned Beef.
Mashed potatoes.
Carrots.
Cauliflower.
A sweet Mustard sauce poured over the dish, after plating up.

A sub with
-honey ham
-mayo
-mustard

and a salad

I think breakfast is good for dinner, especially on a Sunday... have some homeade pancakes, bacon or sausage, and eggs. You could also just have an everything pancake, it's pretty decadent but very yummy. Just add chocolate chips, nuts, coconut, and anything else you like to the batter before you cook them and then top it with peanut butter and syrup... sooo good! Here's a recipe for basic pancake batter...

1 egg
3/4 cup milk
2 tablespoons margarine , melted
1 cup flour
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
Directions
1Beat egg until fluffy.
2Add milk and melted margarine.
3Add dry ingredients and mix well.
4Heat a heavy griddle or fry pan which is greased with a little butter on a paper towel.
5The pan is hot enough when a drop of water breaks into several smaller balls which 'dance' around the pan.
6Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon.
7When bubbles appear on surface and begin to break, turn over and cook the other side.

Tomato, garlic, basil sauce over Angel Hair pasta with shrimp.

Start 6 cups of water to boil in 8 cup sauce pan. When boiling add Angel Hair Paste to cook.

Put a couple of glugs of cold pressed olive oil in a large skillet (iron is best, no non-stick as no one has ever come up with a Recommended Daily Amount for Teflon) add 1 cup of diced Roma tomatoes, 1 or 2 crushed or pressed garlic cloves and 1T of basil, saute for a few minutes, add 5-6 shrimp saute until cooked (red).

Place Angel Hair on plate, spoon on the Tomato, garlic, basil sauce w/shrimp. Eat with sour dough bread if you have some.

A nice lite lunch....I like Coke-a-Cola with it but others like some wine.

So to make it for two just double what I said...now I suppose the wine is mandatory!

I love having pasta or salad for lunch.
A great panini sandwhich, or just plain sandwich (add things that you like) would be great.
Some snacks like crackers and cheese, or a snack pack. And a water would be great. That is what I have almost everday at work for lunch!
