How do you make caramel?!

Melt butter, add brown sugar and salt; stir in milk and corn syrup and cook over medium heat, stirring all the time until it forms firm ball stage - 236 degrees. Take off of heat and stir in vanilla. Pour in generously buttered 9 x 9 inch pan. Cool. Best if left all day before cutting in squares.

all caramel really is is cooked sugar. :)

Caramel sauce is very easy to make. It's sugar and water, cooked until the sugar turns brown, then adding heavy cream.

***Caramel Sauce***


2 cups sugar
1/4 cup water
1/2 cup heavy cream


Combine the sugar and water in a large heavy saucepan over medium heat. Cook, swirling the pot around, until the mixture is a deep caramel color and looks like syrup, about 8 minutes. Carefully pour in the cream (it will bubble up) and continue to cook for another minute. Cool to room temperature.

The easiest way to make caramel is to put a can of Sweetened Con. Milk into simmering/boiling water for 1-3 hours.
Remove can with tongs
Let cool
Open can and enjoy your Caramel Sauce

Sugar burns are the worst!

Carmel Sauce? I just use brown sugar, a lil vanilla, and a little bit of butter. I add either cornstarch (mixed in cold water), or flour to it to thicken it up! Its yummy~

If you want a simple quick way. I get sweetened condensed milk (I get the organic kind) then put it in a pan of boiling water for a few hours in the unopened can. (take label off) if you want it very thick then do it for a couple more hours. Bur for runny Carmel topping do for abut 3 hour. Keep adding water so it doesn't fully evaporate. Yummy.

To get really great caramel, you need a candy thermometer. Equal parts butter (no substitute) and sugar. At least one cup of each. Bring to a boil, and cook mixture until it reaches somewhere between 250-265 degrees. (Depending on how you like it, soft or chewy) A pinch of salt may be added during cooking if you'd like. Chopped nuts may also be added - after it's cooked and before transferring to a buttered pan. Let cool, cut into individual-size pieces, and wrap in wax paper.
