Whats your favorite way of cooking baby carrots?!
Answers: I am wanting to start eating carrots for a side dish, but I like them very tender, not crisp-tender, and I also like glazed carrots I just don't have a recipe. Whats your favorite way of preparing them as a side dish? Im hoping to get some great ideas, please include recipes if you have them! Thanks!
Simmer in a little butter 'til done and than spsrinkle with brown sugar and pop them under the broiler til the sugar is bubbly.
I like honey roasted carrots. hmmm YUM!
I prefer them raw with ranch dip.
but for cooked mash them up a little milk and butter.
slightly blanched then roasted around the meat...mmmmmmmmmm
I just cut them into rounds and saute them in a bit of olive oil until they are as soft as I want them. To do glazed carrots, I then add a bit of grated ginger, some black pepper, and about 2 tsp. honey and swirl over low heat until the honey thickens a bit.
We normally cook them just steamed with a little bit of butter and salt. The sweet/salty mix is good.
I have a method, not really a recipe. I use a veggie steamer in a small pan, add some water. Then I add some maple syrup to the water. Once cooked, sometimes I will add butter, or brown sugar to the carrots. Carrots are really over looked as a side dish and we love them. I make a variety of different kinds. Sometimes I will add some thyme to the steaming water, or garlic, or some rosemary. It just depends...You can't ruin the carrots, just keep trying until you find a method you like. Enjoy!

just stick them in a pot with water, boil them, add any kind of seasoning, then take them out, thats like the best way i like them.
but when you cook carrots it takes out all of the nutrients so its always better to eat them raw.
but they still taste good either way.

I just sautee them with some butter, dill, and chopped garlic until they're tender. They get perfectly sweet.
I like them steamed and topped with a little butter and little honey. Something like but not quite glazed carrots.

Ginger Honey Glazed Carrots Recipe Courtesy of Cathy Lowe
2 tablespoons butter
1 tablespoon finely chopped ginger
2 tablespoons honey
4 carrots, peeled and thinly sliced
1/4 cup water
Salt and pepper
In a small saucepan, melt butter and stir in ginger. Add honey and stir to dissolve. Stir in carrots and toss to coat. Pour in water and cover to steam. Stir occasionally and cook 8 minutes or until tender. Season to taste
Crockpot! It will take 4 hours. Add your bag of baby carrots and about 1/4 cup of water. After 3 1/2 hours add 4 tablespoons of butter, 1/4 cup of orange marmalade and chopped pecans. Let cook for the next 1/2 hour.Yummy!
LEMON CARROTS
3 c. thinly sliced carrots
1/2 TB. water
1 TB. sugar
1/2 tsp. salt
2 TB. butter
1 TB. lemon juice
1/4 tsp. grated lemon peel
Combine carrots, water, sugar & salt in heavy saucepan. Cover and cook over medium/high heat until water has evaporated (about 20 min). Add butter, lemon juice & lemon peel. Heat and stir until butter is melted.
DEVILED CARROTS
6 large carrots, quartered lengthwise (or baby carrots)
1/2 c. butter
2 TB. brown sugar
2 tsp. dry mustard
2 drops tabasco sauce
1/2 tsp. salt
fresh ground pepper
Saute carrots in butter for about 5 min (you might like them done longer). Add all other ingredients. Cook for about 10 min or until carrots are done.
In general, if you slice your carrots thinly, they'll get softer than if you leave them in large pieces - that's a personal preference decision
I love them steamed with lemon butter and a pinch of dill.
Also, I take 2 large potatoes [chopped small], an onion chopped, 1 bag of baby carrots, 1/2 pound of fresh, snipped green beans, chopped or left whole, and sometimes asparagus or broccoli, and toss them in a large bowl with 1 TBS. rosemary, 2-3 cloves of garlic, and 2 TBS. of olive oil. Then I pour the mix into an aluminum foil packet-lg. and roast it on the BBQ or in a 425F oven for 45 minutes to an hour, or until the potatoes are perfectly roasted.
Man, my favorite way to eat baby carrots are when they have been slow cooked with a roast. I bet you could cook them in beef broth and a few spices for the same effect. Nothin' better to me!
