Mexican food is yummy, cheese!?!


Question: I want to make Queso dip, the kind that you would order at a mexican restraunt, a little runny, white cheese based.. Really good.. :) Any ideas on the cheese? Or maybe a known recipe? And also! The white cheese mexican restraunts use on there tacos / soft tacos. What is it? Queso blanco or something else? If someone could enlighten me on that, I would appriciate it. Thanks!

CHILE CON QUESO
1 c Asadero cheese; shredded *
4 oz Jalape?os, chopped;
-drained, OR
4 oz Poblanos, deveined &
-julienned
1/4 c Half & half
2 T Onion; finely chopped
2 ts Cumin, ground
1/2 ts Salt

Heat all ingredients over low heat, stirring constantly,
until the cheese is melted. Serve warm with tostaditas.







Asadero, chihuahua or oaxaca, cheese is a semi-soft, white, Mexican cheese made from cow's milk. This cheese has good melting properties and becomes softly stringy when heated. Asadero is used on sandwiches or melted on cooked foods, including pizza and nachos. Asadero, which means "roaster" or "broiler" is available in braids, balls or rounds.

They sell it at wal-mart. It's next to the sour cream and cream cheese area. There is a little Mexican food section. It looks sort of like mozzarella, but the cheese is firmer than mozzarella. There shoud be some in that section, and I believe it does say queso blanco on the package. I think you add a little milk and maybe some diced chiles or jalapenos if you like things a little spicy.

Ingredients
1 cup monterey jack cheese or asadero cheese or chihuahua cheese , shredded fine
4 ounces green chilies
1/4 cup half-and-half
2 tablespoons onions , chopped fine
2 teaspoons ground cumin
1/2 teaspoon salt
1 serrano pepper , chopped fine (optional)
1 tablespoon fresh cilantro , chopped fine (optional)
Directions
1Put all ingredients in a double boiler and heat on medium.
2Cook until melted and well blended, stirring occasionally.
3Serve with fresh tostadas or hot flour tortillas.

Buy 1 can of Rotel original diced tomatoes and green chilies and add your favorite cheese and microwave. It makes great Queso.
