Does anyone know how to make original Lebanese Knafe?!


Question: I cannot find a recipe for knafe using smeed like it's made in the pastry shops. Does anyone know a good recipe NOT using filo doe?

FOR THE DOUGH:
1 1/4 cup of smeed (farina) hard
1 stick of melted, unsalted butter
2 tbsp. sugar
3/4 tsp. rose water (ma wared)
1 1/4 tsp. orange blossom water (ma zaher)
FOR THE FILLING:
3/4 a large piece of sweet cheese, cubed (jebne heloueh) (mozzarella curd)
2 tbsp. smeed
1 1/4 cup milk

DIRECTIONS FOR DOUGH:
Mix melted butter, smeed, sugar and 2 flavored waters in a bowl. Spread dough in the bottom of a Pam sprayed 9x13-inch dish.

DIRECTIONS FOR FILLING:
In a pot on low heat, melt the cheese, smeed and milk until melted. Constantly whisking. When melted, pour filling over dough, cover with foil.

Bake in the oven on 375 degrees F for 40 minutes. Covered the whole time.

FOR THE SYRUP:
2 cups sugar
1 cup water
1/2 tsp. lemon juice
1/2 tsp. orange blossom water (ma zaher)

DIRECTIONS FOR SYRUP:
Boil sugar and water in a pot, after 1 minute of boiling; add lemon juice and orange blossom water.

KNAFEE

PART I:

1 box (9 to a box) shredded wheat
1 qt. milk
Rended butter

Soak shredded wheat in cold milk until softened. Make opening in center from end to end in each shredded wheat and fill with Ma'mool (recipe next). Brush baking pan with butter and place shredded wheat side by side in pan. Brush tops Heavily with butter. Bake in slow oven, 250 degrees, until golden brown about 30 minutes. Remove from oven, cool, then pour syrup over it all.

PART II (MA'MOOL) :

1 tbsp. butter
1/4 c. sugar
2 c. ground English walnuts (actually pine nuts from mid-east deli or health store is best)
1 tsp. rose water

Rose water available at some deli's or healthfood stores but sometimes stores like Victoria's Secret. Be sure it's rose water, not perfume!

PART III (SYRUP) :

1 c. water
1 c. sugar
Juice of 1 lemon
Few drops of rose water
