Eggplant Parmesan??!


Question: 2 different recipes - 2 different ways to dry the eggplant. Which works best? Anyone ever tried both ways? Thanks!

1 - cut into slices, salt, and let sit in a collander for 30 minutes. Then pat dry with paper towels.

2 - cut into slices, dredge in coating, and let sit on a rack for 30 minutes.

#2 sounds easier and less time consuming. What do you think? thanks!

I've always done both...slice, salt, let sit, rinse, pat dry, dredge, and dip...phew!

Eggplant parmigiana is alot of work, but the salting cuts the bitterness of the eggplant. If you don't mind eggplant's naturally bitter taste, you can skip the salting process, but my kids won't eat it unless I do :(

It is important to salt and let sit. In the end it will be worth it.

i've done the first one, but instead of 30 minutes and a collander, I've put it on a cooling rack and it was faster and then I used papers towels to dry it. Also I just cut it and prepaired it without drying it out and it turned out really good and it doesn't have that dried out taste.

what is the coating in #2? If you add liquid to it you might make the eggplant really wet and runny!

Salting the eggplant is to get the extra moisture out so it's not so soggy. You have to be careful so you don't make it too salty. I would salt the coating and let sit in papertowels in the fridge for 30 minutes. Slice the eggplant thin. Will also help with being too soggy.

# 1 other wise the eggplant will fall apart.
