What steps do you take to cook a really good steak on the grill?!
Answers: I am asking only about open flame gas or charcoal OK? No other answers please....just the open flamed grilling technique and seasoning that you prefer? Looking for some real good tips here.
If you really want the flavor of the steak, DO NOTHING to it except season with salt and pepper. Bring the steak to room temperature before you grill. Sear the steak on one side for a few minutes, flip and cook on the other side until desired doneness. Medium rare or medium. I suggest a ribeye steak. Nice fat content which adds to the flavor.
I just did this yesterday - marinate steaks (I used flat iron) in raspberry walnut vinaigrette heat your bacon iron on the grill - place steak in the center and place bacon Iron on top. Cook for 7-10 minutes each side turn only once. Serve with salad. I have also just grilled them with salt and crushed black and red peppers - serve with roasted corn and potatoes. Good Luck!
most importantly.....use high heat.....about medium high.....i usually season with my own seasoning mixture (lowerys seasoning salt, garlic powder, onion powder, paprika, cracked black pepper, and thyme)....you can use it for pretty much anything.....season the steaks up and throw them on....just cook them to your preferred temperature
I agree with Mie... If it is a good steak, (such as a ribeye/delmonico) just grill it. We like to put twigs/sticks in our gas grill. We used to cook steaks at our cabin over an open fire and they were great!!!! I would never marinate a good steak...
We occasionally like a chuck steak (cheap) soaked in soy sauce overnight or most of the day anyway, and grill that. Not too bad!
I use a gas grill.
Turn flame to HIGH. Scrub grill if needed when it gets hot.
Bring steaks to room temp, or close to it. You want the chill of the fridge knocked off.
Season w/ FGBP and kosher salt, both sides.
Slap on hot grill, still on HIGH. Do not touch, leave alone about 3 min. Then turn 90o and slap back on same side. This gives X-grill marks and is entirely optional.
In another 3 min, flip steak over. Give it 6 min, still on high.
Remove to plate, X-side up. Cover w/ foil and let sit 10 min or so to reabsorb juices so steak will be tender and juicy.
