Any ideas for left over pot roast?!

Question: I was just wondering if anyone had any ideas to use left over pot roast (beef) as a new dish. It was cooked with carrots, potatoes, onions, and basic seasonings in slow cooker to start. I can't stand eating leftovers the same way twice, so any new ideas to re-invent tonight's dinner would be great....Thanks!

Chop up and make meat pies or sheppards pie.
Cube and throw into some spaghetti sauce
Fry up and make some tacos
Simmer with BBQ sauce and make BBQ sandwhiches

I would go with the spaghetti. My mom sometimes makes hers with left over hunks of pot roast in it and it's to die for.

Hot roast beef sandwiches and cold ones.

Beef-Vegetable or Beef-Noodle Soup (use fresh veggies for this)

Truck-Stop Sandwiches (chopped beef in gravy over buttered toast)

Roast Beef Po'Boys (beef in gravy on french bread)

I make a beef stroganoff out of left over pot roast. Any veggies left over I serve on the side. The seasonings from the roast just add to the flavor.

I do this with left over meat: I buy Pillsbury pie crusts and make a pot pie. Basically take your leftovers and maybe add a can of beef gravy, top, and back until golden brown. They are really good!

If I have leftover roast I usually make it into vegetable soup.

When I have a pot roast , the next day, or maybe 2 days after I cook it, I just take the meat and chop it up real small, make a gravy and put the meat in and simmer for a little while, maybe 15 minutes or so, Make mashed potatos, and eat it over the potatos, yummy its sooo good!

You can put in a wrap add some cheese,or make a pie.
Take meat only and make a roast salad.Pastry mini
put all into pastry add some new stuff like olives and cheeses,
bake like a pocket.I love roast mayo sandwiches...dill pickles.
and some sun chips.

A long-time family favourite is to put those left-over bits (without the veggies) through a meat grinder (I suppose a food processor would work too) - add some keilbossa or smoked sausage to it too. Grind up some cooking onion (1 good sized one should do) and mix it with the meat. Then put the meat/onion mixture in a non-stick pan to heat thoroughly. Meanwhile, boil some rotini (curly noodles). Once the noodles have been drained, toss them with the meat/onion mixture. Done. Serve with a salad.

(We would usually put those leftover bits of beef - cut into small chunks - in the freezer until we had a few. Then we'd pull together the remaining ingredients and prepare this dish.)

shred the meat up and make tacos

yes use pie crust and make a pot pie.

yes, as everyone else has stated, it's gotta be sandwiches then shepheards pie, then soup.

You could make a great pot of soup with that. You can add other ingredients like tomatoes, celery, mushrooms, etc. Anytime I have leftover pot roast, I always make a pot of soup. It is so good. It is amazing, you can get 2 different meals out of a simple pot roast. Good luck!!

Wow, all these ideas really sound delicious! But I can't believe no one has thought of roast beef hash! Just chop up the beef in small dice and chop up about an equal amount of potato in small dice and fry in a pan with butter and salt and pepper :) You can add hot sauce too. Nice with a fried egg on top.

Some call it SOS, hash or slumgullion. We call it good...by any name.

Par boil some cubed potatoes, peel and slice some carrots and add them to potatoes. Mince one med. onion and place in large skillet with 1T olive oil cook low until clear. Add shreaded beef to onion. Add drained potatoes and carrots, reserve the water to add to skillet. If you had brown gravy left over, pour it in too. Add some black pepper and 1 t Worchestershire sauce. Add enough water or meat juices to cover. This can be leftover beef broth, consomme, 1 T beef demi glace, or just a boullion cube or two. Correct your salt at this point. Add a shake of garlic powder.

Let simmer covered for 20 minutes on low. Remove lid and add reserved veggie juices if needed. Add enough milk to cover about 1 c.
Make a slurry of 3 T cornstarch and 1/4 c water
and add to hot hash. Add enough to thicken, may need to add more or less to your taste in thickness. Add 1 c frozen green peas, and toss about, but do not allow to cook, only heat through. Pour over toast or rice. Or leave out the boiled potatoes and pour over mashed potatoes.

Put it in a blender Nice sandwich

shred the beef and mix with BBQ sauce. Put it on a hamburger type bun and it's really yummy. You could serve the potatoes and carrots as a side.

I like to make a stir fry a couple days later. Saute lots of mushrooms, celery, onion with the beef, throw in a bit of soya sauce, sechuwan sauce, and believe it or not, balsamic vinaigrette, fresh ground black pepper and if you have it, a pre made jerk sauce or hot sauce. When the veggies are cooked just how you like it, throw in a handful of toasted almonds. So yummy and easy. Enjoy!!

Take the meat alone - add a good BBQ sauce to it .. simmer it for a little while .. you will have good BBQ sandwiches.

Also - you can freeze the meat - and have it another day -- it will still be good.

You can also make a philly sandwich - add cheese, etc.

I doubt this is new, but my family loves it. I cut up the leftover meat, simmer it in the gravy, or if there isn't and left, I buy a packet of gravy mix. It is served over boiled noodles. The veggies can also go into the mix.

Make a beef pot pie. Mix the beef, cut up, and the veggies together with gravy, place in a baking dish. Cover with a pie crust, or uncooked biscuits Cook for about 1/2 hour at 350, or until the biscuits are done.
